Be a lot less labor intensive if you use a spoon for jalapeño cleanout. Also the veins in the jalapeño hold as much heat as the seeds. Just my 0.02.

Would it still be just as good if you cut the jalapeño in half and just used both sides? Or is that too much jalapeño?

Yes...I just like to make bite size. The half jalapeno, unless you let them cool down for a while, tend to spew hot, melted cream cheese when you bite into it.
