    Before buying a freeze dryer, perhaps research to find out more about the downside of the machine; some people have problems with their machine and it's big and heavy and hard to return!
    When trying to decide what to freeze dry you can start by asking why.
    Start by asking yourself this question. Why are you freeze drying food? Knowing this should help you decide what you should freeze dry first.
    I'm freeze drying because:
    Just to freeze dry leftovers?
    You want to make your own food for camping/backpacking?
    For if/when the SHTF?
    For a short term emergency?
    You have your own garden and want to freeze dry the food?
    You love Costco but don't have a family of 6?
    You are good at finding the food sales but only have 1 freezer?
    When you cook homemade chili just for yourself you make 10 gallons? Because you have 3 full freezers and are worried about power outages?
    If I knew then what I know now, I would have freeze dried things in a different order. Or maybe not, because I started freeze drying because we had 3 full freezers, I was thinking of getting another one, and I decided I should buy a walk-in freezer instead. I started looking into walk-ins and realized they were expensive to buy (even used ones) AND expensive to own and operate. Then I found out Harvest Right was making home sized freeze dryers. One of my first thoughts was "I like Mountain House!" I have used their food for backpacking almost 45 years and we even kept some in our travel trailer, for just in case.
    Freeze dried food will stay fresh for many years and be ready and waiting when you need it.
    We do videos showing how we are using our Harvest Right Freeze Dryer to freeze dry food for long term storage. (We have the medium size machine that we got in August of 2017) We talk about how to load and unload the freeze dryer, how to know if the food is dry, is it better to freeze dry raw food or cooked food, and do a few taste tests. Freeze dried food is also great for prepping or just for camping and snacking!

    For me the takeaway from this video is that many FD vegetables actually benefit from a longer rehydration time. Many fd'ers complain that they are not impressed with FD veg but possibly they don't give enough time for rehydration. Thanks for sharing.

      Exactly! It took hours to get the water out, but a lot of people expect everything to rehydrate in 5 minutes. Some foods take longer, some a lot longer. For pickles, I'd plan 1 or 2 days minimum. Another part of it may be expectations. I never assume that frozen food will be the same as fresh, and freeze dried foods have been frozen as part of the process.
      I've heard from viewers telling me that they had been told that carrots won't rehydrate, that pickles just don't work, and a number of other items.

    so happy to see this, I love celery. raw and crunchy. I have canned celery, onions, carrots for soup bases and other recipes. I have freezed dried some celery but blanced it . I will definitely be doing this way, much easier. I also do the leaves if any are on mine stalkes. I use to cut them off and throw away until I discovered what flavor they had. not everyone is a celery lover. Thanks for the video.

      While it's nowhere near as crunchy as fresh raw celery, I was surprised that celery that had been frozen could be crunchy at all. Definitely usable in tuna salad. Now that I know that plain celery can rehydrate okay, I'll do my own batch and test different times/methods of prep and rehydrating.

      the it is still crunchy really got my attention. I'll be watching for your next experiment and also thank you for the video on apples and pairs, I never thought about cubing them that way . will have to a batch of apples if I can dig out my thingymajig. I think I forgot where I put it. @@SchoolReports

      Now that I know it can rehydrate okay, I'll do my own batch and test different times/methods of rehydrating.

    Hot water, and if your wanting it for chicken salad you will have to let it sit for at least 30 min. then drain off the excess liquid and use it

      I used cold water this time because: 1) I knew it was going to be overnight, and 2) I didn't want to cook it. I wanted it to have the best chance of still being crunchy.
      I did let it drain at least 30 minutes. At 3:18 you can see it's in a paper towel lined colander.

      I have freeze dried tuna salad with chopped celery & onion already mixed in and it did well. So your probably right, it should work about the same it I were to put them together _after_ freeze drying.

      I'm pretty sure that should work fine. We have freeze dried tuna salad with chopped celery and onions already mixed in, and it did well.

      Except it still would have had celery in it. 🤣 I don't put celery in _my_ omelets, ever. Maybe cheese, bacon, ham, mushrooms, but never celery. 🥚🥚🥚 Or just the classic 3-egg french omelet.

      🤣 I would _never_ put celery in one of my omelets! I've put a lot of things in my omelets, but never celery. (But mostly cheese, bacon, or ham; maybe mushrooms) Or just the classic 3-egg french omelet. 🥚🥚🥚
