I do the same with Aubergine(Egg Plant). Prepare the same as with the Zucchini. as for the beer batter I use Tempura flour. My friends and family go crazy for it. It delisch in summer hot or cold and hot in winter as a snack with soup and croutons.

Hey, a tip for you. In Europe we do not tend to use cups so giving the weight of cup ingredients is good. However, we do use spoons so there is no need to give the weight of spoon ingredients. Do yourself a favour and STOP giving the weight of spoon ingredients in your recipies.
I had this problem but found out that for many ingredients you can find a cup to grams converter on the Internet. Hope this helps :)
