    Anna Jones is on the podcast today, one of my absolute favourite cooks! Her food and ethos around injecting flavour are so aligned to my way of eating and it was a joy to host her on the pod.
    Anna is a cook, writer and regarded as the voice of modern vegetarian cooking. She’s written favourites such as “One: Pot, Pan, Planet”, “A Modern Way to Eat” and many more that are always on a foodies kitchen counter.
    In her latest book “Easy Wins”, Anna takes 12 hero ingredients that are guaranteed to make your food taste great, such as lemons, olive oil, onions, peanut butter, mustard, tahini. Most of you ‘Doctors Kitchen Foodies’ probably have these in your fridge or cupboards. And Anna has masterfully created meals that use them to boost the flavour and versatility of home cooking. The so called “Capsule Pantry”, which we explain at the start of the podcast is an awesome concept. And I’m going to start thinking about what would be in my own capsule pantry!

    Since I switched to 99.5% plant based nutrition, I probably use about ~20 ingredients which can transform any vegetable/beans into a star and a delicious meal....for me they are garlic, onion, leek, ginger, lemon, miso paste, oyster sauce, soy sauce, vinegar, cumin, coriander (ground, and fresh), turmeric, pepper, ground sesame seeds, anchovy fillets, tomato / tomato sauce. I don't mention olive oil, as it is by default - I use it for eveyrthing. Every time I sit down to eat my latest 100% plant based invention, I keep telling myself: how could I miss on such delicious food & tate variety for years, when I still ate lots of pasta, white rice, potatoes, and meat? Even then I ate vegetables, but I really had no idea how to flavor them to make them truly 'desirable' and worth craving. Nowadays, when I want to have fun, I put on some 80s music and cook!

    Garlic onion lemon,ginger,turmeric pepper,soy sauce, fish sauce, tomato paste, vinegars olive oil plus carrots for sweetness.

    I love eating vegetables. But I am also a carnivore... For me, I believe there there is a balance between meat and vegetable... But spices are definitely a part of my habit. It's nothing for me to put five or eight spices in with vegetables...
