@@Manish_254 Curd fats provide fatty acids to the human body. The fats of the classical curd contain 20-25% of mono-unsaturated fatty acids which do not oxidise and are healthy. Besides curd is a fermented food which is a probiotic and a source of good bacteria. Whereas fried foods are often high in trans fats & the frying process will change the chemical structure of fats, and make it difficult for your body to break them down, leading to negative health effects like belly fat or high cholesterol over a period of time. A healthy option will be to add raw vegetables like cucumber or carrots to the raita rather than deep fried boondi if you are calling it a ‘healthy’ recipe. But of course once in a while you can enjoy the version as shown in this video!
