Doctor Mario's Adriatic Barbecue Fish

- Adriatic Barbecue Fish is a simple, healthy and easy way to grill and enjoy freshly caught fish, without smothering out the natural fish flavour with sauces and marinades. Suited to both blue, and white flesh fish varieties, it is about as simple as it gets.
In this short video, Mario and I serve up our fresh catch of the day, enjoying a glass of wine and the satisfaction of a day spent in good company, fishing the way our dads taught us to.
Seasoned only with salt and pepper, and garnished only with freshly chopped garlic and continental parsley in an extra-virgin olive oil drizzle; the smoky char flavour and typical Adriatic flavours will transport you with the first bite to any number of sleepy Dalmatian fishing villages, serving up fresh fish in family run waterfront restaurants.
Enjoy with a crisp dry white wine, such as sauvignon blanc, or a "bevanda" - watered down glass of dry red, the way Dalmatians do.
TIPS:
dry the fish thoroughly with kitchen paper before grilling to minimise flesh sticking on the barbecue
monitor the heat and minimise turning the fish to prevent it falling apart
Very thick fish, or fish that taper significantly from tail to head may need to have lower heat under the tail end, to prevent over cooking, while the thicker part is yet unfinished.
You can also stuff some chopped garlic, lemon and parsley into the abdominal cavity to add extra flavour while cooking
