I always bring my Chili to the next level by adding a tablespoon of Drinking Chocolate powder, also I always let the Chili cool down once for about 1 hour before reheating and serving. Brings out much more flavour and really thickens up the Sauce nicely.
Just made this... husband and son are eating it right now. Their review... "It's a keeper!" That means I will be printing the recipe and adding it to my recipe binder. Only the winning recipes make it into "The Binder!" Thanks for helping a mediocre cook become a better one. :)
This is incredibly good and easy to make! I used a box of elbow macaroni which most of us have in the house, left out the beans, only used 1lb of ground chuck and liked the cilantro so much that I put two TBSP of finely chopped in the mix as a last step. I didn't have chili powder so I used a TexMex powder I had in the house - excellent. Also I only used two cups of cheese, I didn't want to overwhelm it. Thanks so much for the great recipe, this is a great channel!
The best part of this video is that you not only invited your son to taste the dish, but you asked for his opinion and what he liked about it. That'll not only make you a better cook, but it will help him to make good food choices when he's out on his own!
What I do when I cook this is add some cubed fresh tomatoes alongside the chilli pasta: the combination of the hot meal with the room-temperature tomatoes is sooooo good .....
They do add a freshness as well as a firm bite that isn't otherwise present in canned/jarred tomatoes. I first remove the seeds and gelatinous liquid and, if I weren't lazy, also peel them
"Make it your own." That's what I do with a lot of these. I also watch That Dude Can Cook. When I make Beef Burgundy, I make a combination of your recipe and his, taking what I like from each.
This is almost identical to the way my late Mom would have made this; at the end, for color, she'd chop up some green onion and sprinkle them around the top. It's a great recipe, thanks!

When our daughter was an equestrian, we would go to Cattle Penning events and we would buy Frito Boats to eat in our hands while in the stands watching. You take a individual size of a bag of Fritos, tear it down the side, cover it in Chili, onions and cheese and eat with a spoon! Delicious!
This was a staple in my home. When the budget got tight, this was our go-to. Especially on Halloween night. After trick or treating, we would be famished. This was our dinner. LOVED IT ❤❤❤!!

Hope it's ok if I share a great tip I learned years ago watching the inimitable Nick Stellino: After oiling the baking dish, lightly coat the bottom and sides with breadcrumbs. Not only does this facilitate cleanup (it completely avoids baked-on mess!), it adds a delicious crunch and extra flavour!!
Really enjoyed this while in army. Freezing weather and they would truck out hot chili-mac made you forget how miserable you were. I call mine "kitchen sink mac" because the chili is loaded. Big favorites at cookouts.

Channel is getting close to the 1M subscriber mark. Fantastic! This looks good, but I like my chili on the sweet side, so might add some brown sugar and/or cocoa powder, and maybe swap out part of the beef stock for coffee or beer.
When I do chili Mac I make a good cheese sauce and combine it with a simple ground beef chili. I combine them together then add the pasta. This looks very good, but I think some folks want some creaminess beyond a stovetop Mac and cheese “topped” with chili. I enjoy your videos.

Nice meal. Like the idea of shells instead of elbows. If you use medium shells, you get a bit of the Chili/Cheese mixture inside the shells. I like to add a cup or so of corn. You get the color and the sweetness of the corn. And more veggies.

I am like James and skip to the end🤣 My kids are grown so I don't cook for them anymore but I love to see end results. I mean...I don't skip all the way through, I'll watch a minute here and there but will stay toward the end just to see the beautiful dish and the commentary is always a good time😅
many cooking channels have a separate kitchen for their studio/video production. i follow a Canadian cooking channel and they converted their garage into a test kitchen for their videos.
I’m Italian, so all of us had two kitchens. One in the basement for big Sunday dinners, one upstairs for the immediate family that hardly ever got used. 🤣🤣
I am cheap and just use a premix packet or you can get a larger size of Old el Paso chili mix. For me, it is cost effective. It comes in low sodium, mild, spicey, etc. I also add a grated carrot in my chili because it cuts down on the reflux/heartburn of the tomatoes. Some add sugar but I prefer the carrot. JM 2 cents.
I have too cook for two 12 year olds every day for school. I have a bunch of 80/20 beef and vegetables. This looks like a good option. High protein, some carbs I might add carrots for sweetness. Could probably adjust the ground beef for some tofu, but I haven't converted them to vegetarian yet. They'll choose.
I love the idea of making this into fried balls. My preference for halftime snacks would be cookie scoop size with some sort of food processor crushed chip instead of breadcrumbs. Maybe Doritos, corn chips, or pork rinds. My reality is that I lack the patience for all that scooping and rolling. I'd spread it into a parchment lined jelly roll pan or sheet pan, refrigerate it overnight, then cut it into small squares before proceeding to the breading station 😊

Replace the pasta with small Fritos Corn Chips and you'll have "Frito Pie". A wonderful dish my mother made when we were kids.

You can substitute "Rotel" canned tomatoes/chilis instead of using the fresh version. Works well.
