  • Go behind the scenes at the new Los Angeles location of Christina Tosi’s Milk Bar store to see how she makes her ever-popular Birthday Cake.
To mix both the batter and the frosting for hundreds of cakes a year, Tosi and her team use a Hobart Legacy 140-quart floor mixer - the industry’s only all-day, continuous use heavy-duty mixer. Getting a moist batter and fluffy frosting time after time requires a combination of art, science, and a mixer that delivers consistency and precision with each mix. From creaming the butter and sugars, to adding the eggs and incorporating air into the mixture, to alternating the last wet and dry ingredients, Chef Tosi explains her process. She also provides her cake-decorating tips and the philosophy behind her signature technique - leaving the outside of the cake frosting free!

Weird, it should work! Try adding a little more oil to your crumb mixture if it won’t hold together and stays sandy instead of crumby. once it can hold its shape, clump it up into fistfuls and then break it up on a sheet pan into smaller pieces. Bake until it’s no longer translucent (12-14 mins). Good luck 🤗

But speaking of which, at least the bakery at Walmart discounts their bakery goods when it’s about to expire. I don’t expect them to throw it away but most experienced bakeries know the quota they’re able to meet and if they don’t sell out that day then they’ll discount it the next day. I have a friend who works at a bakery and she makes fresh bread nearly every morning

Then we would set it on its side on the floor (It was a huge aF back room, and there were I believe 5 spots on the floor that had drains (BIG drains) to catch any running water or w/e else. So--- I bought ALL the supplies, Cake Ring+Acetate,Clear Imitation Vanilla,Milk Powder, etc etc....am all ready to begin baking Christina's extraordinary cake for my Son's BD next week, BUT!!! ---When I measured the 6" Cake Ring in my quarter sheet pan ( to be clear, 9"x13") it BARELY, barely gives me 2 rounds. I marked the bottom of the quarter sheet around my Cake Ring with chalk to be certain where/how layers would be cut. It doesn't seem to me that a quarter sheet pan ( I've several of them) can yield enough cake for 3 rounds. ANYBODY else have this problem?? I'm frantic now because I told my DIL I was making THIS cake, plus all the ingredients I already purchased for it, so PLEASE can somebody HELP??? Did I mention my Son is an Executive Chef?! I always bake for him his whole life & he loves my work, but I've never baked a cake using the quarter sheet method before, so I'm worried. I would add only that I am NOT a novice baker; actually sell my baked goods/cakes/pies/breads & have for many years, so this ain't my first baking rodeo, LOL. Any input would be seriously deeply appreciated. Thanks in advance for your kind help. xoxoxo

    • @CabbaRouge

P.S. to above---I have 6" cake pans I could bake this cake in, but that feels like cheating. I can also trace-cut around one of those 6" pans to get my rounds; I just wanted to stick to Christina's methods so my Son's BD Cake would be authentic to Milk Bar. I want to be that "Hardbody" she talks about. :) Before anybody suggests it, I've already adjusted the size of my adjustable Cake Ring as small as it will go, still barely get 2 rounds, and while I can see where scraps would be but they don't seem enough to mush together a third round using the BD Soak.

It tasted weirdly too sweet and salty and the amount of crumbs the recipe called for were overwhelming. I'm glad I tried it but this was a gigantic disappointment because the frosting tasted fake and requires fake ingredients like clear vanilla extract and shortening. Literally gave me bubble guts at 3a. Supreme disappointment in this, I don't understand what the hype is about 🤷‍♀️

It was worse than e eating a spoonful of sugar. And everything was so heavy. Like thick and tense like there was too much butter. To be clear, I tried 2 Cookies, the strawberry short cake, 4 different cake balls, and the ice cream. I thought I had to like one thing. But no. I was so disgusted and nauseated after the experience. My bf and I shared a small ice cream cup and over half went to the trash. He felt so sick after eating it. It was just an over all disappointing experience. I was so excited too. This is sadly just overhyped and over sweetened . Not worth it at all. 😢

I AM A BELIEVER IN EATING CAKE....
what does the rest of the world do with their cakes? i wonder............
Honestly looks EXTREMELY overrated ... doesn't even make me happy when i look at it....probably more suitable as a divorce or breakup cake that u send to ur ex....

    Never like her
She was always meaner to black cooks on hells kitchen. I read her demeanor. Not to add she had a dessert called crack pie which she was force to rename. Put it together.

Worst business ever, I placed an order a week early for a birthday and they never contact me again. Emailed and asked where it was and they basically replied they didn’t send it. No explanation. Nothing. They sure charged me almost 100 dollar’s immediately. Don’t support this business, 100s of negative reviews show they don’t care about their customers or their birthdays.
