An easy dinner I love and do all the time is sheet pan dinners with protein, veggies, and potatoes or some variation of that! And clean up is sooo much easier 😅

Living in San Antonio you should really take advantage of going to a Mexican store and buying homemade flour tortillas. Really makes a difference.

Quick question when you put the chicken enchiladas in the oven was just to melt the cheese on broil?
I just put it on 375 and bake until the cheese is melted! I found broil dries it out too much

Use a hand blender to shread chicken, the one you use to make cakes. It works well and doesnt make it too small like a.food.processor
The kitchen aid mixer.with the paddle attachment works too I believe
