    This is 3 yrs. old and still a great recipe. Just thinking about the ginger. I use either a 2:1 ration of ginger to garlic or garlic to ginger. Then I add a pinch of white pepper and a tables spoon of fish sauce - which is natural flavor enhancer. Lastly, If I want to sharpen it up a bit, I add a bit of Chinese mustard. Keep the flavors balanced and let the soup broth be the main attraction. Thanks Chef. your videos have helped improve my Chinese cooking skills .

    Have you ever added sugar or fish sauce to your broth? And how strong is the ginger flavor? Is it very noticeable or is it a subtle taste. I want a more subtle ginger flavor so my kids will enjoy it. We love egg drop soup and I would like to use your recipe tonight to make it.

    • @HAPPYWOK
      @HAPPYWOK  9 років тому +2

      I haven't ever added sugar or fish sauce to your broth, only for stir frying. This soup have slight ginger flavor. or you may omit all together that ginger and substitute garlic instead. I hope your kids will love that soup. thanks for asking and thanks for watching.

      Poor thing! I know it is freaking cold right now in NYC. We live in Brooklyn NY in the late 80's. ( 7th Ave - bay ridge area ). Yes ! i added sesame oil, right after i poured those beaten eggs. Thanks for asking.

    To improve the starch addition and prevent clumping, temper the starch mixure with some of the hot broth, a little at a time and stirring after each addition. This will help prevent the starch from clumping when it is added. ( The process is called "tempering" )

      +electriccocoon ----- pour start / water mixture into hot broth. thanks for asking.

    • @DrMongoloid
      @DrMongoloid 8 років тому

      +electriccocoon Yes you put the starch water in a bowl and use a ladle to spoon hot broth on it, one ladle at a time slowly poured into starch mix. Do this a couple of times until temperature is slowly raised then you can add it all back into the soup.

    • @HAPPYWOK

      For a larger quantity, just multiple the amount of that starch solution. Rule of thumb for starch solution, one tsp to 1/8 cup of water. Thanks for asking.
