That ice cream sundae looks tasty, but I personally would have gone for cocoa powder over carob powder. Also, organic cane sugar is, from a nutritional perspective, just regular sugar.
well he stated at the beginning of the video the idea was the remove all PROCESSED ingredients entirely from the restaurant #1...
All alternative sugars are the same as regular traditional sugar nutritionally, but several times sweeter than traditional sugar to make you use less, not make you use something better.
I don't get how a processed sugar is different from those other sugars, it's still sugar and yeah it has other flavors but it's still sugar O.O

Mark Yen exactly - and some sugars like coconut sugar and dark sugar (which still has molasses) do actually have a certain amount of minerals to them that make a tiny difference nutritionally, they are mostly digested in the same way tho...and the dates mostly contain fructose which means that they are mainly digested by the liver (which is not necessarily something you want)
but all in all considering that a broad variety of different sweeteners is used in this kitchen I would say the intention was to bring new flavors, because the other aspects seem negligible in the big picture

was almost impressed until he busted out the 'organic cane sugar' the slightly less processed version of white cane sugar - I don't really think it was as big of a challenge as he stated although it is fun to try out other sugars/flavors

Actually most, if not all, of us have an ancestor that ate tree bark or grass to survive. It's pretty common during famines around the world. Pre-industrial age famines were not unusual - Renaissance France had a period where at least one of its regions had a famine every year.

For an instance..Honey is lower in fructose and contains other trace minerals, it's processed and absorbed more slowly by the body than refined sugar. This means longer-lasting energy and a slightly less of a spike in blood sugar, which is easier on your body and digestive system. Microscopically differences considering. Peace.

Gramercy Tavern in NYC. They also have this meatball dish that is one of the best things I've ever eaten. Highly recommend it!

I love to share a well made/gourmet sundae with my friends now and then. I also regularly do cross training, run, bike, walk, light weight bearing. The majority of my diet is organic plant-based food with little animal based. I do not have diabetes. Diabetes is a complex disease--sugar, carb, genes, lifestyles, stress, etc all play a role in increasing the risk. Just saying. Peace.

Sugar is sugar is sugar. The body processes it exactly the same way whatever it is.
the sucrose part of it, sure. But non-organic cane sugar is harvested by spraying drying agents on it, which are not exactly removed during the processing. They have an antibiotic effect and irritate the gut lining. Guy -had- has Crohn's, not diabetes.
