I love all your buttercream frostings. Light, delicious, and not too sweet, the extra effort in cooking the egg/sugar combo is well worth the effort. A suggestion-every time you do a buttercream video, you should spend 1-minute letting people know if the frosting is too runny to put in the fridge for 5 or so minutes and beat it again; it will come back glossy and pretty after 5 or so minutes of whipping. I dumped my first 2 tries at making buttercream because it looked like cottage cheese. A year later, I learned buttercream can be saved so the 3rd time I tried, it turned out perfect. I will look up caramel buttercream frosting on your website for a special cake I am making next week. I used your pecan pie cake recipe and made cupcakes instead for a party, and they were a smash hit. I used your brown sugar buttercream recipe for the frosting.
I love your personality!
