New York (where Suits is based) is a one-party consent state, which means as long as one of the parties to the conversation consents, then the recording is admissible. States like California, on the other hand, are two-party consent states where all parties must consent before the recording becomes admissible. And if you are wondering, federal law is one-party consent.
It's often admissible to rebut a statement under oath. Ask someone a question under oath, let them lie, then the recording proves them wrong. The recording is not offered as evidence in the proceeding itself, rather just to prove the witness perjured themselves.
So, do they give all the medical/pharmaceutical related clients to Alex because he used to be a Pharmaceutical Salesman/Psychic Detective's Partner?

Varies from state to state. Since this show takes place almost exclusively in NYC, this tactic works, because New York is a one party consent state. Only one party in a conversation needs to be aware that it is being recorded.
