Barry, I'm telling you this because I love you. Get yourself a tri-tip from Niman Ranch, available at fancy shops everywhere in California. It's marbled like wagyu, I've never had anything like it. Freeze a steak, slice it ultra-thin while its still frozen, cook it sukiyaki style. Use it in a sandwich somehow.
Well, Frank, though I have made tri-tip many times (usually grill roasted or smoked), I must admit that I have not done it sukiyaki style. I do love that cut and am grateful that is available at pretty much any grocery store here. Definitely going to give this a go. Thanks!
That looks amaze balls, and I do like the baked over fried katsu. I cut WAY back on deli meats cause bad hearts run in the family on my dad's side, so now I'm all about the non deli meat sando. Plus, I think some pickled red onion would also go well

I haven't been able to find it in my area so maybe I'll just breakdown one day and order it online. I first learned how to do Katsu from the "Cooking with Dog" channel. You have to find and try Japanese "yum yum" sauce. It's a hibachi steak, chicken, and shrimp/fish sauce. It's so freaking good. Also great as a salad dressing.
Pork tonkatsu is about three times as good as chicken. A proper tonkatsu sandwich is amazing. And they have to be fried. I dunno how anyone would recommend baking it. No way, man. Shokupan, shredded cabbage, tonkatsu, tonkatsu sauce, kewpie. That's the way to do it.
That katsu mayo sauce looks like it would be good on any savory sandwich. Also a good salad dressing or vegetable dip.

What is kewpie mayo?
It is a Japanese mayo made with egg yolks and has msg both of which boost the savoriness (umami) of it.

Odd, every recipe I have ever seen is ketchup/tomato paste & mayo with a variety of seasonings.
