1) Of course you can sharpen with that if stones and you will get amazing results, no need to use Japanese natural stones always. 2) If the burr is too much large because you used a course stone, then it is better to take it off before passing on the next finer stone. If you create a reasonable burr in 1000 grit stone, then you don't need to take it off until the last and finest stone.
