I’ll give you a joke, two people in my life One is my girlfriend who says she hates okra because it taste like a slug meaning the sliminess she had in the past, I told her you never had a Guyanese cook okra before, mind you my girlfriend is Irish, after I made this recipe she took one spoonful taste and knocked out the pot, she can’t wait for the next time I make okra, one extra step I have seen in other videos is you can use your air fryer to do you hydrate the water from the okra if you have it if not just spread it out on some bounty paper like my mom used to do and let it dry for a day. Again this channel is amazing it’s very simple straight to the point and clear and precise when it comes to cooking delicious authentic homemade bring you back in time recipes.

Some people cook it the way you mentioned and that's really not how we were taught to cook vegetables with shrimp. Cooking shrimp to perfection does not apply to cooking in vegetables. If the shrimp is the main or only ingredient then that applies. I don't think anyone looks for the tenderness of the shrimp when they take a mouthfull of roti and pumpkin with shrimp ( tbh I don't think you would even be able to tell ) Shrimp in vegetables is meant to cook along throughout the cooking time of the vegetable thus releasing it's juices and mixing with those of the vegetable ( so you can take a mouthfull without any shrimp and it tastes great with the shrimp flavor ( not like just plain pumpkin ) and that is because of the shrimp cooking along with it. What you have mentioned is like cooking the two separately and then mixing them after which is not the same thing. People are seeing a lot on Tv, where Chefs are usually stressing the importance of not overcooking shrimp, but that does not apply to all dishes, especially Guyanese vegetable with shrimp dishes In Guyanese vegetable dishes the shrimp is usually overcooked , and not only in Guyana, I have seen recipes from other countries in our region where the Chef says at the beginning of the recipe that "the shrimp in this recipe will be overcooked but that is the traditional way of cooking this dish and it tastes great"

Cut up the okra from the day before and leave it on a tray in the sun for a bit all the slime will dry up my Agee been doing this and it works.

I put the tomatoes towards the middle after the okra has dried up, because putting it at the beginning introduces moisture.
If you fry the okra first when frying add 1 tesp. Vinegar it will take away slime. You won't taste it. Then add to shrimp and veggies.
