Is the PRO version needed (some docs states it is not), but when I tried without it does not have 'blocks' as an option for the fields

Yes its needed pro version 5.8 and +
Earlier it was decided it will be free but because of the amount of efforts involved it was decided to keep it in pro and its worth it. Because u also get many other features like reapeaters

Elementor + ACF is great ! 👌
However, i feel its personal preference. For someone who does not use Elementor can still use Gutenberg with ACF block features.
