Assuming your thinking popping one off outside of any gravitational influence; While space is a vacuum, a vacuum is defined as a region of low pressure. Defining it as 'low' pressure and not 'no' means there must be some mass there to create the remaining pressure. The bullets interactions with this particulate mass will eventually reduce its velocity (by way of newton's third) to an inertial momentum. Newton's first tells us that all mass is inertial mass, applying equivalence, all mass is in constant motion, so yes.. it will stay in constant motion, not because it was fired from a gun (as that kinetic energy will dissipate over time) but because inertia is an inherent property of mass.
