Hello my friends!!!
So..., as you can see, I have achieved 60hz/60fps, so now it looks smooth.
I sadly have seen a new problem, reflections, I can't see them in person but as you can see the GoPro captures all of them, is crazy... I will fix it! :D

There are kits than you place between monitors to get rid of bezel. Easiest to make one is from a screen of an busted tv. Bit more imersion. As for reflexions, try to darken area arround you, like a mini dark room. Or try to find a CPL filter for your camera.

The side monitors should be set at about 135 degrees to the central monitor, not like you have now. Then you won't have a problem with reflections.

amazing congrats bro and for the reflections try to play with less lights or do what most sim racers do that is put a black wooden pice or piece of black cardboard on top of the monitors to cover the light that comes from above
