Milk : 1 lts
Vinegar /Lemon /Tartaric Acid : 2 tsp or more
Sugar : 1 Cup
Water : 3.5 to 4 Cups

Well in our recipe we haven't used reetha.actually it is not needed when we cook at home. Else yes, small amount of reetha is ok it's herbal. Mostly "halwai" uses it.

Agar paneer se sara moisture nikal de to kya rasgulla hard nhi honge
Nai Rasgulle hard nai honge... Wo fat se soft ya hard hote hai.
Mam kya rosgulle Pani m boil krne se acche banenge, maine bhot recipe try ki par ab tak perfect rosgulla nh bana, sabhi recipe m chashni m boil krte h pehli baar bilkul new tarika dekha kya perfect banenge kyunki Maine bhot try Kiya par success nh hui

Can we keep in room temperature..after dipping in chassshni as previously in freezer it became hard.
We have to keep in freezer just for 20 - 30 min, then they should be transferred to fridge.
Sudden cooling is done to stop the cooking process.

Rasgulle gol hone k liye 3 cheezon ko balance karna hota hai... high flame, thickness of utensil n water level.
Gehra bartan hi lijiye ga. Pani aadhe se upar hona chahiye. Agar koi kadhai ya faili hui cheez hogi tho rasgulle chapte ho jayenge. Aap cooker ko bhi use kar sakte hai. N thank you so much for your feedback it means a lot to me ❤

It will last for 4 days, they won't become hard. But in fridge not in freezer .
Were the rasgullas cooked on high flame all the time?
Yes ! The "boil" should remain in water.

Yes, you can make rasmalai by same method, just add 1/2 cup sugar(not more than this) while boiling rasgullas. I haven't uploaded rasmali recipe yet.
While putting the rasgulla in cold water instead of getting double in size they shrinked. What can be the reason ?
Reasons for same are
1. Opening multiple time while cooking
2. Over cook
3. Time lag in between (more than 2-3 min ) putting them in cold water. Suppose you switched off the gas and let rasgulla lying in hot water for longer duration.
4. In cold water size remain same, it increases in chashni... Squeezing and putting is chashni is important as shown.

Please refer this video carefully for preparing rasgulla, there in no scope of skipping even for 10sec. You will lose one or the other information.

Yes ! Wapas dhakna hai. flame low kiya hoga tabhi shrink honge flame low nai karni hai last tak. It should have heavy boil. That water boil keeps it round and fluffy. Nikal k thande pani mai zaroor dalna hai.

I tried rasgullas were good..but when I knead my chena it was like butter..so I couldn't give round shape....and they shrink as I switched off the gas...but rasgullas were yum

Hmm, mostly yahi dekhate hain. Milk main fat content kam hona chahiye issiliye cow ka bolte hain. Aaj kal cow wale main bhi fat add kar diya jata hai tho behtar hota hai ki ek baar ki malai nikal le... Zayada fat hone se bahut zayada soft ban jate hain. Iss video main kafi cheezein alag hain... Kaafi mehnat n experiments ke baad bana hai 😊

मेरे भी अच्छे बने...पर इतने स्पोंजी नाही बने
कई बार दूध का फर्क होता है । एक दो बार में और अच्छे बन जायेंगे । थोड़ी सी प्रैक्टिस चाहिए होती है इन चीजों के लिए ।

Aree, it means crumbly tha... gas off karke fir se chaan len... 1 chammach cornflour add karke knead kijiye. Frir daliyega. Pani main dalne ka ye fayda hota hai chena waste nai hota..

Okey not to worry, follow other steps like cold water bath n squeezing an all. Do not let them dipped in hot water else they will shrink. Main thing is texture.
