My dad always harvested pigs in November after it was cool and insects did not fly and it was always the hams of the pigs used for thanksgiving and Christmas dinners. Farm life was learning to raise and grow food off the land.
You've got this! I like the wooden set up for the refrigerators. And if it's too big you can cut the pig in smaller sections to cool. For me butchering the meat first time might be the hardest to do. My sister and I seem to cook the same meals often.

The bearded butchers have some good videos on processing deer and pigs if ya wanna learn the cuts. its always fine to just debone and make sausage and pulled pork to. it will get easier the more yall do. proud of yall.

I once had to make 2 dinners out of a potato, half a potatoe was the entire meal, not a side. I will NEVER go hungry again I know that, but I can't say I regret it happening. I now know what it's like to go hungry, and not like the hungry we get when we just forget to eat for awhile. I will never watch anyone go hungry.

When you go to process the hog, make sure you put plastic on the floor to contain the fluids that drip from the carcass, it’ll prevent unwanted odors from said fluids and tracking those fluids across the rest of the floor. 2 years ago, I harvested and processed my first deer. I’ll tell you, it’s a lot of work. Make sure your knives are sharp, and be extremely careful. Fluids and knives DON’T mix. If you have latex gloves, USE THEM. Everything is going to be very slippery, so again, BE EXTREMELY CAREFUL. While processing your hog, any and all of the scraps you accumulate, you can grind up into sausage. Even the odds and ends from the hams, tenderloins, neck meat, rib meat, cheek meat, back straps, and any scraps you couldn’t cut from the bones, can all be ground into sausage. You’re going to get exhausted from it, your hands are going to cramp. So take turns, because a 300# hog is going to take up the whole day to process. Also, you’re going to have to re-sharpen your knives throughout the day as you’re processing. I recommend using a diamond stone to sharpen your knives, the edge will hold up better and make the process a little faster. Good luck with that hog. Oh, before I forget, you’re going to need a lot of zip-loc bags for all of that meat. If you can get meat packing paper, that’ll help with your bigger cuts of meat, and you can’t forget the sharpie’s, so you know what meats are what in the packaging.
@@chandrasutton4669 if I can help people that have never processed an animal before, I will share my experience with them to make it easier for them. When I processed my deer, I had to put the meat in 5 gal buckets until I could finalize the process into vacuum sealed bags.

What ever you do, don't cut into a gut, that is really bad news. When I was a kid and still, I can not stand to be around when an animal gets killed. I would go as far back in the woods as I could when they were killing the hogs. Once they were dead it didn't bother me, I wasn't crazy about how it stunk though. lol It is a lot of hard work. We never killed a hog until it was really cold in the winter because we didn't have electricity, or any of the conveniences of today back then out in the sticks to preserve the meat. Are you going to build a cold smoker to smoke the meat? I just sent you an email.
