Looks like a recipe my husband would really enjoy! Do you ever use a folded outer leaves under your weight to hold the cabbage shreds under the brine ? You give a very clear explanation and it is helpful the music is not over powering. Thank you!💐

How much sea salt?
I used 2 tablespoons of sea salt as the cabbage was slightly bigger .
