HOW TO MAKE LACTO FERMENTED SALSA | EASY STEP BY STEP GUIDE
In this video, we are diving into the delicious and healthy world of lacto-fermented salsa! Whether you’re a fermentation enthusiast or a salsa lover looking to add a unique twist to your favourite dip, this video has everything you need to create a zesty, probiotic-rich salsa right in your own kitchen.
Lacto-fermentation not only enhances the flavor of salsa but also introduces beneficial bacteria that are great for your digestion and overall health. Plus, it adds a tangy twist that’s unlike anything you’ve tasted before! This recipe is perfect for Taco nights, Dipping with chips or adding a burst of flavour to any dish.
INGREDIENTS
7 medium sized fresh tomatoes
1 Onion
2 Jalapeños (or your favorite peppers)
5 cloves of garlic
A bunch of Cilantro/coriander
3 bell peppers
1 1/2 tablespoon of sea salt
INSTRUCTIONS
1. Chop all vegetables and add to a bowl
2. Add sea salt to vegetable and mix until brine is produced
3. Transfer vegetable into glass jar
4. Push vegetable down using a tamper and ensure jar is compact
5. Place glass weight on vegetables ensuring they are fully submerged in brine.
6. screw on the lid and leave it on a counter to ferment for 1 week (or more if in a cold climate).
7. Transfer to refrigerator and enjoy.
*** Once open transfer to refrigerator
***Lacto-fermented salsa can last in the refrigerator for up to 1 month
***Always wash your hands before fermenting vegetables
***Place a try/plate under the jar during fermentation as the fermentation process could cause the brine to bubble over

    was the initial water for rinsing or for soaking? also you mentioned leaving them in a dark place, how often should that be done and should it be in a dark dry place or cool? lastly, how often do I rinse them and how do i store them after each rinse?

      The initial water was for soaking for 24 hours then I rinsed it everyday (morning and evening) until it was ready. I placed the jar at a corner on my counter with little to no light exposure. By day 6, I kept the jar on the window to get some natural light and also to help with photosynthesis (to help the sprouts turn green) and increase nutrients.

    Carrots are dry. Don’t produce much after a lot of sqeezing

      Carrots could sometimes be dry but you could add a little bit of water after grating them and adding salt to create enough brine.

      Thank you for your comment. You would need salt to ferment any type of vegetable. Salt helps to control the growth of unwanted bacteria and keeps the vegetable fresh with the nutrients intact. You could try pickling your vegetables if you do not want to use salt, although with pickling, you would need vinegar . I have a few videos on how to pickle vegetables, you can check them out.

      Thank you for watching. I used 2 cups of water to 1 tablespoon spoon of sea salt. The glass weight I used were random glassware I found at the store. It helps to keep the vegetables submerged in the brine while fermenting. Please let me know if you have any other questions.

      Normally for any fermantation it is 2% of salt. I take 1 liter of water and 1.5 tablespoon of kosher or sea salt. And i usually add 1 teaspoon of sugar. All per one liter of water.

Why did you move to Japan and are you staying there for good? 😊 I’m in California but I would love to move to Japan one day… also how is shopping for vegan groceries there?       I moved to Japan for work, It's a nice country to live in. Groceries are relatively cheap and easily accessible. You could start by visiting for a few weeks to see if you like it.
