  • How to freeze the must in the neck of home made sparkling wine bottles by using salt and crushed ice.
    Take care to restrain the cork and keep your face away in case it flies off. look at my video how to make crushed ice.

    Is this good method to use on home brew Elder Flower champagne ? Turn them upside down and leave for how long so all must/ sediment is at the top ?

      Bern Clark How much sugar and yeast do you add per bottle for the second fermentation?

      Nabil Rehmatullah The simple way is to add one tea spoon of caster sugar to each bottle. The method I use for 6 bottles or 4.5 lts; is, to take off a cup of wine, add to it eight tea spoons of caster sugar, heat it so that the sugar is completely dissolved, let it cool, then add one pack of sparkling wine yeast and pour all back into the the demijohn and mix it in. When secondary fermentation starts then bottle it. Providing the first fermentation was complete, this will make a light sparkling wine. If you want more bobbles which is more pressure, then more sugar but you do take a risk with the bottle exploding. So be careful, make sure you use proper pressure bottles.

    I should have said after the cider has settled in the large container, then bottle it and add a teaspoon of sugar and fix on the stopper. leave for a while to complete firmentation.It is then ready to drink but you need to open it carfully not to disturd the small amount of must. It is only how I did it and may not be to everyones taste.

    Hi Bernie. I followed your steps, crushed ice, salt, and well over 30 mins but the neck did not freeze. What could I be doing wrong?

      +Jaime Camargo. Hi Jaime. what was the air temperature? When I have done it it has been cold so may be put them in the freezer for a while, say half an hour no longer you could freeze them otherwise. it should only take about 10 min max.

    Hello, I've had my bottles upright for two weeks now, do I need to sit them on the side for two weeks then upside down for two weeks. Then do this process of removing? Could you please provide guidance? Thank you

      Hi Nicole. You did not say what you are making wine or cider. For wine I leave it upside down for months It is in my shed so I leave it until the next winter and do it on a cold day. Last week I did 2016 and put some in the freezer for 10 minutes first. that worked fine.

      Bernie Clark I'm sorry I'm making sparkling wine. So keep it upside down for maybe 3 months in a cold temperature the entire time it's downward?

      Right now it's in my home on its side at room temp about 65 degrees

      Hopefully you have measured the sugar. Just two tea spoon after you have tested with a hydrometer to see all the sugar has been converted. Then store tilted, 65 is OK but a bit cooler would be better. be sure them corks are wired on. It will be a mess if they blow off.

      Bernie Clark thank you for your reply. I will move it to a cooler place maybe my basement... how could would be too cold? After my wine was dry, I added yeast and about 12g of sugar each bottle and I do have plastic cork and wire on.
