    Everyone here seems to be complaining about her not washing her chicken or hands. “Washing” your chicken (or raw meat in general) actually increases the potential of contaminating additional surfaces in your workspace. It’s not a big deal either if she hasn’t washed her hands either as long as she hasn’t been handling too many surfaces outside the workspace. While not a cure-all preventative, brining conditions don’t really promote growth conditions for bacteria unless they are either halophilic (salt loving) and/or cryophilic (cold loving) organisms. Also, although growth is very much inhibited for organisms that fall both in and out of these categories, is it NOT completely halted. While you shouldn’t be brining your chicken for a week probably, an overnight one really shouldn’t anything to worry about either.
    On top of that, if cooked properly (i.e., baking or thoroughly cooked on the stove top), a majority if not all of the pathogenic organisms should be killed off.

    Another tip for brown sugar. Put some in a bowl, can even be a big rock of brown sugar. Moisten a paper towel and put over the bowl with the sugar in it. Microwave for 30 sec intervals, it usually softens within a minute without melting! Faster than the bread method! Great brine btw ☺️

    Put one of those jumbo marshmallows in your brown sugar.
    Keeps it soft for a long time

      Oh what is Prague #1? Is that type or brand of salt? I've never heard of it but it sounds interesting!

      Prague #1 & #2 are curing salts.
      They are common but require strict usage as they contain nitrites. But if used properly, can add another dimension to your culinary delights.

    after brining the chicken and put it out of salty water . can i put it on a freezer to cook it later

      Technically yes - but it'll end up too salty that way, and the brining will make the texture rather rubbery if it gets frozen. I don't recommend that.

    Can I reduce salt if I want a longer time to brine? Does time have a factor on the outcome?

      You know I've never tried that - but I do know if you leave chicken in a brine for too long, the texture becomes very unpleasant and mushy. The salt breaks down the cellular structure over time. It's what allows the flavor into the cells to begin with, but too long and it'll cause too much break down. I hope that helps!

      - 30 Minutes Minimum = Quick Brine (Use more Salt)

      I've tried to see this video. at least 4 times! It has changed to another video every time I get it back. That's very disturbing to me...why does that happen? It will probably change again b4 I can see it all the way through! It's very aggravating!

    What does the sugar do in a brine? Does it Makes the meat sweet?

      Not at all. It does help enhance and highlight the meats natural flavor, and it helps in caramelization and browning.

    I was taught to use sea salt as opposed to kosher salt

      I like sea salt too, but it's more expensive and harder to find here. It's also a 'tad' less consistent as far as measuring - different manufacturers produce different sized grains, so there's less consistency between brands. But - sea salt is amazing and I love it too!

    What was the whole heel of bread thing about? You made it seem important, but then never did anything with it that we could see. You said "Best solution EVER! I showed this to my daughter, she was astounded..." then you changed camera angles, and the brown sugar and bread heel were never seen again

      She used the heel of the bread to store in the hardened brown sugar bag. The bread will soften it up.

    After 7hrs of brining... i removed the chicken from it then i put it again inside the refrigirator for another 5 hrs without rinsing...den after 5 hrs i rinsed the chicken very well but when i cooked it...it is very very salty...what heppened

      Osyhiel Obispo Boneless chicken should only be in the brine for an hour...an hour and a half max.

      never saw cross contamination.. camera cuts in and out soooooooooooo how would you actually know that.... washing chicken does absolutely nothing to prevent salmonella. It actually increases the chance of spreading the bacteria, which is now all over your sink and faucet...... your welcome!

      She did not wash the chicken because it was placed in the pot from the package and from the pot with the ice to the rack.. Plus, if you wash the chicken, you will notice the chicken taste better..

      Study shows that washing your Chickens actually get crossed contaminated more, than not washing at all. The Salt, in the brine will kill most bacteria since "most" bacteria can not survive in Salt. It's best to rely on cooking to kill bacterium, since some bacteria can actually "live" and "thrive" again when condition is right.

      I know Eros makes me laugh would you eat it after washing it 😹 ... makes no sense the bacteria is destroyed by cooking not heard of anyone eating it after it's been washed but it must be safe its washed 😹

The Salt, in the brine will kill most bacteria since "most" bacteria can not survive in Salt. It's best to rely on cooking to kill bacterium, since some bacteria can actually "live" and "thrive" again when condition is right.
