Even though i do not understand his language, i happen to understand the part which he said he'll use all the bones and head to make, the gravy, that didn't appear anywhere but the already completed gravy in the end. I must tell you, the bones and head curry gravy is heavenly, especially for fish that big. I think the making process of the gravy is the same as the briyani gravy, exact same spice, only to add a lot of tamarind juice to add more liquidity and to tone down the heat of the chilly powder. And i think he has already taught somewhere before on how to make fish curry gravy. Same process. Should try, for those who where thinking of trying this recipe, with fish this big. As i emphasized before, taste like heaven.....
