Hello, thank you for your comment, I used bacon and parmesan for the reason that my content is primarily for Russian residents and we don't have access to reasonably priced Pecorino and Guanchala right now
It starts the recipe very badly when the chef takes Bacon. Guanciale if you can find some first choice or Pancetta if you are not able to find Guanciale As soon as someone talks to you about Bacon it is not credible Parmesan ??? Pecorino, romano that's it, or 2/3 Pecorino and 1/3 Parmesan

My friend this are the ingredients for carbonara: Pork cheek Egg yolk (one each person + one whole egg) Pecorino cheese or Half Pecorino cheese,half Parmesan cheese Grain black pepper ( I roasted in a pan and crushed) Your method it is fine
