    The 10 Carbonara Commandments
    1. Always use guanciale. If we had wanted bacon, we would have gone to America.
    2. No Parmesan, just Pecorino. The person who says half/half has something to hide.
    3. Don't boil the egg! It's better to have an infection than scrambled eggs.
    4. No onions, no garlic, it's not a stew.
    5. No oil, butter or lard. The guanciale must be drained.
    6. No chili. You go to Calabria in summer.
    7. Do not use any other spices except pepper. If you don't like it, go for an Indian dinner.
    8. Anyone who adds cream goes to jail.
    9. Never say carbonara and vegan in the same sentence.
    10. Tonnarelli, spaghetti, bucatini, rigatoni. All is well, the main thing is that you don't overcook the pasta.

      Hello, thank you for your comment, I used bacon and parmesan for the reason that my content is primarily for Russian residents and we don't have access to reasonably priced Pecorino and Guanchala right now

    It starts the recipe very badly when the chef takes Bacon.
    Guanciale if you can find some first choice or
    Pancetta if you are not able to find Guanciale
    As soon as someone talks to you about Bacon it is not credible
    Parmesan ??? Pecorino, romano that's it, or 2/3 Pecorino and 1/3 Parmesan

      Hello, thank you for your comment, I agree with your opinion, I used parmesan and bacon intentionally since most of my audience doesn't have access to pancetta and pecorino

      Your goal is very understandable, but just changed the title which seems more appropriate to me for: Pasta Carbonara, for those who don't have access to traditional products for the authentic recipe.
      I didn't know that some products were difficult to obtain.
      So your video is very important and sorry if I was offensive in my comment.

    My friend this are the ingredients for carbonara:
    Pork cheek
    Egg yolk (one each person + one whole egg)
    Pecorino cheese or
    Half Pecorino cheese,half Parmesan cheese
    Grain black pepper ( I roasted in a pan and crushed)
    Your method it is fine

    Bacon instead of Guanciale, Parmesan instead of Pecorino, you are certainly not a good Chef, insulting our Italian food culture!!
