Just wonderful, I've been looking for "roasted parsnips and turnips" for a while now, and I think this has helped. Have you heard people talk about - Eeycarlott Incredible Expediency - (Have a quick look on google cant remember the place now ) ? It is a great one off guide for discovering how to get the amazing looking body that you desire minus the normal expense. I doubt you're losing much to the water, but if it bothers you, use the least amount of water necessary to cover the potato, then when the potato is done, remove it if you don't want it over cooked, but let the water continue uncovered to reduce (or just evaporate since it's not exactly a sauce), and mash your potatoes with the reduced water to return anything the water leached out. Or just bake them instead of boiling them.

Potatoes are a high glycemic food, so how does that help insulin sensitivity? High Gi foods cause insulin resistance, therefore countering insulin sensitivity. Now I'm confused.

Yes thats true lookup Keto. But there is alot worse for your body, its called sugar. ( the added sugar in foods that contain no nutrients) Chocolate for example is very high Gi

This whole demonization thing of white potatoes is totally ridiculous. I eat them everyday and ive been losing weight just fine. Why? Its because I dont add tons of fat and calories to them. When I bake them, I add just a small spray of olive oil to the skin and eat them plain with salt and pepper.
I think people add things like cheese, sour cream, butter and bacon to them and dont factor that in. That can easily add 100-400 calories to a baked potato. Potatoes are an excellent weight loss food. They are incredibly satiating and delicious on their own. And cheap!

They can still be tasty without oil. I cook mine in the microwave and then crisp them up in my air fryer. Add ketchup, a little salt and pepper: voila! (That isn't the only way either. Great in soups, etc.)
