nope, the ending definitely shows Gil treating Artoria giving in to the Mud and her Alter self like some leftovers of what she used to be. He isn't so dissatisfied that he wouldn't touch her body after all the struggle but he's ultimately not interested in her anymore. Collecting treasures is like breathing to him - so it means he stops paying attention as a person and acts like an arbiter (whose standard is his pleasure/displeasure and egotistical views). Gil as a person only shows in the situations where he's robbed of frivolity to act on his impulses or when that exact frivolity backfires at him. Although he was objectifying her as a woman (treating her body like a prize) it isn't anything to write home about as that's more the result of how women were treated back in his day. There are two more reasons of his infatuation with her which were specified: OG Saber is deeply in his STRIKE zone; her way of life reminds him of Enkidu. Salter stops being his type and remind him of Enkidu. She's neither innocent nor "foolishly arrogant". The ideal scenario of their relationship is either her defeating him or him simping for her from distance. It just doesn't get more wholesome between the two than that.

But even if she DIDN'T get corrupted, what would then happen should she succeed her "wish" would be a DRASTIC change in history ala singularity or lostbelt tier. At that point, Saber's "ambition" would have been complete and she wouldn't have one anymore so Gil would probably view her spark (her ambition is part of it) as having gone poof, done and change his mind because he's not so lost when it comes to objectives that he'd simp over her so hard he'd go throw humanity's future away. Not when other materials such as CCC revealed how big of a fanboy he is of humanity and human progress. (The reason he wanted to cull humans in UBW was because he perceived them as stagnating and in need of correction, with a few centuries left max before extinction revealed in Hollow Ataraxia). In short, there is absolutely NOTHING wholesome about his feelings towards her. Him being dead from her beating him isn't my idea of wholesome; I don't hate him as a character. Him being locked in eternal unrequited obsession isn't wholesome either. Ever felt an unrequited attraction towards someone? It sucks cus its unrequited. Now take it to obsession levels and I think anyone sane would realize this isn't a very wholesome state for Gil, nor for his prize. The best result is him moving on. This scene is probably why in her own route when she won he said "Some things are only beautiful if he can't obtain them" -- cus the moment he does (or even if he doesn't but the chase definitively ends), the fun of chasing is gone and he's clairvoyant (Sha Naqba Imuru) so he probably saw this alternative. You'd know what I mean if you ever flirted around for fun... once the other person likes you back, there's not really anything interesting or fun about flirting with them anymore.
