Beef fillet is best raw

- Ingredients
- 200g beef fillet, diced
- 1 small shallot, finely diced
- 3-4 cornichons, diced (or 1 dill pickle)
- 1 tbsp capers, chopped
- 1 tsp olive oil
- small handful of parsley, finely sliced
- 1.5 tsp dijon mustard
- hot sauce if you like it spicy
- egg yolk to garnish
- croutons to garnish
- salt to taste
Method
1. In a bowl, mix the beef, shallots, cornichons, parsley, mustard, salt and hot sauce.
2. Serve it on a plate with the egg yolk on top and croutons on the side
3. Enjoy!

@@Briguy1027 When you mush it all together you're decreasing the surface area of the food. It is why thin sliced deli meat tastes different than thick sliced. Also texturally you're mushing it all together creating more of a paste than something a little more airy and crumbly.

Hey Andy! There’s also a Korean version of this called yukhoe that uses raw garlic, Asian pear, cucumber, sesame seeds/oil and egg yolk too. Give it a try!

Pretty sure the Japanese version is Beef Yuke, similar with sesame oil, sesame seeds, Kimchi base sauce, scallions and not sure if anything else 😂 but it's delicious by itself or with a side of plain white sushi rice.
This is literally in my top 5 dishes. There's nothing like it. It's weird, in America in the 19th century it was a big thing but fell out of favor. Has come back strong, thank God.

The restaurant I work in in Paris, France makes this recipe (it's a classic in French restaurants btw). The cook usually marinate the egg yolk in soy sauce and it's such a nice addition to this dish ;) Love your channel btw Andy !

I mean raw egg like some raw beef cuts are fine usually. Japan especially so because they vaccinate their chickens and it makes me wonder why they don't don't do that in more countries.
Would it raise the cost? Maybe and for the us maybe a bit more because there is a lot more eggs and chickens but it'd be worth it.

Tenderloin is underrated af. It cuts like butter and melts in your mouth and you dont have to cut around any weird fatty parts.
It is indeed very tender - but it lacks intramuscular fat so it has very little flavour

@@tompcd1189 my grandparents would kill me because they grew up very poor where their one priority was to stay alive. Now that we are a lot better off, they want us to live safely and healthily. They are very hard to convince and from their beliefs raw meat is a definite no.

I use duck yolk confit for next level richness and I truly think it elevates a tartar to cold smoke it afterwards.

Its fine to eat raw meat. We do it all the time in germany. If the Standards are High and get checked its ok. Mett is very common. You put minced meat onto a bun, add salt, pepper and sliced onions. Simply delicious.

Yup. I agree with him because beef fillet has almost no taste on its own. It needs to be complimented with other ingredients, and tartare is a fantastic way to do just that.

100% with you! Worst 'steak', but I cannot get enough of steak tartare - I eat it daily if I'm in France, sadly difficult to find in the UK (although I did actually have it in place of a dessert at Wiltons in London... so not impossible).
If you're nervous of eating it raw you can always blanche the outside of the filet in boiling water and then shave it off. That massively lowers the risk of getting sick from contact contamination during the butchering process.
I really enjoy the flavour beef fillet, both cooked and raw.

Boring, unless you're asking for true paella being chicken and rabbit then that'd be next level.
I prefer rump for flavour myself, as long as it's a thick cut and it's griddled to medium rare to rare.. Basted in a little garlic butter but snot burnt, with a little pepper sauce and the usual sides..

I’ve always wanted to try beef tartare!
In Belgium we call it the filet américain it's almost the same but we add some home made mayonnaise with mustard and a rwa egg joke with pickles non sweet ones, pickled onions, and capers and grounded beef filet mignon . The version you showed is the french version but still one of the best way to eat a filet mignon.
I made beef Wellington for a coworker of mine and her entire family absolutely loved it, tenderloin is incredible, one of my favorites next to ribeye and New York strip.

I LOVE steak tartare! In fact, I think I'm a bit of a carnivore, since when I was a kid, I would steal pinches of raw (beef) meat loaf when my mom made it! It was oh so good!
Hi Chef. The trad' way, as far as I know from 45 years of eating/ making it, IS to add also a splash of Worcester sauce and a little bit of ground pepper. The childrens, here in France, can have it mixed with some ketchup. The hot sauce should be two drops of tabasco. Try it this way and you'll never do it otherwise. But you're 1000% right to Say you should source your beef to an impeccable abattoir. In doubt , grill it , don't risk to catch , at best, a "ver solitaire" 😊
Tartare is something I always thought was out of reach to put together in your home kitchen but this looks really delicious and relatively straight forward to prepare. I am definitely trying this one out! and I dont even own a ring mold so no chance of any issues there LOL

Very very very tasty 10/10 one of my favourite things to eat. A tenderloin is nice and soft for this so you don’t get any hard bites you get when they use other pieces
Butcher here : i approve.. Real tartare is not chopped meat tho.. Tartare is scraped meat from this cut/or any filet.

This requires a inner strength to have a taste for raw meat. I could not resist the urge to make a meatloaf and cook it. I cannot eat raw meat, but I could eat jerky to charcoal burnt meat.
As a professional chef, this is the best method for filet in my opinion and he nailed it. Had me laughing at “avoid the ring mold”
Hi Andy , I love a fillet steak coz it tender and fat. I remember my wife got a rib eye steak before and I will admit it’s the nicest I’ve ever tasted but when I’ve ordered it in other restaurants it’s been very fatty and no where near as nice, that’s why I stick with the fillet.
