Beef fillet is best raw

- Ingredients
- 200g beef fillet, diced
- 1 small shallot, finely diced
- 3-4 cornichons, diced (or 1 dill pickle)
- 1 tbsp capers, chopped
- 1 tsp olive oil
- small handful of parsley, finely sliced
- 1.5 tsp dijon mustard
- hot sauce if you like it spicy
- egg yolk to garnish
- croutons to garnish
- salt to taste
Method
1. In a bowl, mix the beef, shallots, cornichons, parsley, mustard, salt and hot sauce.
2. Serve it on a plate with the egg yolk on top and croutons on the side

@@Briguy1027 When you mush it all together you're decreasing the surface area of the food. It is why thin sliced deli meat tastes different than thick sliced. Also texturally you're mushing it all together creating more of a paste than something a little more airy and crumbly.

The restaurant I work in in Paris, France makes this recipe (it's a classic in French restaurants btw). The cook usually marinate the egg yolk in soy sauce and it's such a nice addition to this dish ;) Love your channel btw Andy !

This is literally in my top 5 dishes. There's nothing like it. It's weird, in America in the 19th century it was a big thing but fell out of favor. Has come back strong, thank God.
Hey Andy! There’s also a Korean version of this called yukhoe that uses raw garlic, Asian pear, cucumber, sesame seeds/oil and egg yolk too. Give it a try!

Pretty sure the Japanese version is Beef Yuke, similar with sesame oil, sesame seeds, Kimchi base sauce, scallions and not sure if anything else 😂 but it's delicious by itself or with a side of plain white sushi rice.

I'm forced to agree, 100%. And I'm not saying it would have been the right choice for this dish (also not saying it would have been bad), but I am saying that the Garlic Cholula is... really something.

Steak tartare is common in almost every pub and restaurant in my country. You spread garlic on the croutons and then the meat and it’s the best.

As a butcher’s son, I have been a meat eater all my life and I totally agree. Filet steak is my least favoured steak as well. For the pure flavour of meat you can’t beat rump steak BBQ’d on the rare side of medium rare. No sauces or condiments required. Just my humble opinion.
Beef Carpaccio with all the garnish trimmings is my fave , 😊

I use duck yolk confit for next level richness and I truly think it elevates a tartar to cold smoke it afterwards.
I think I'm ready to try it after having raw salmon tartare for a while. In my mind it's basically some sort of sushi.

@@tompcd1189 my grandparents would kill me because they grew up very poor where their one priority was to stay alive. Now that we are a lot better off, they want us to live safely and healthily. They are very hard to convince and from their beliefs raw meat is a definite no.

Boring, unless you're asking for true paella being chicken and rabbit then that'd be next level.
Tenderloin is underrated af. It cuts like butter and melts in your mouth and you dont have to cut around any weird fatty parts.
It is indeed very tender - but it lacks intramuscular fat so it has very little flavour

Yup. I agree with him because beef fillet has almost no taste on its own. It needs to be complimented with other ingredients, and tartare is a fantastic way to do just that.

Very very very tasty 10/10 one of my favourite things to eat. A tenderloin is nice and soft for this so you don’t get any hard bites you get when they use other pieces
Tartare is something I always thought was out of reach to put together in your home kitchen but this looks really delicious and relatively straight forward to prepare. I am definitely trying this one out! and I dont even own a ring mold so no chance of any issues there LOL

If you're nervous of eating it raw you can always blanche the outside of the filet in boiling water and then shave it off. That massively lowers the risk of getting sick from contact contamination during the butchering process.

@@jaward51hat's because you haven't ever separated the yolk from the membrane correctly. Use duck eggs and they're more resistant to breaking, or as i can recommend lightly confit your egg yolk and the texture is creamy and buttery.
If you can eat sushi then tartar is even better because of more flavors
I agree. It has the least amount of beefy flavor but is incredibly tender... It really is made for a sort of tartare or even a ceviche style.
I really enjoy the flavour beef fillet, both cooked and raw.

I made beef Wellington for a coworker of mine and her entire family absolutely loved it, tenderloin is incredible, one of my favorites next to ribeye and New York strip.

@@Waldenpunk There is always danger in eating it raw. All that needs to have happened is for the meat to have touched something from the intestinal cavity. So really, you need to basically have the cow butchered that day and in front of you (or someone you trust). And even then, you're just minimizing the risks.
You won't typically get nontypoidal salmonella from beef unless it's been contaminated. E. Coli is more likely but most non-immunocompromised people won't get sick from contact with E. Coli unless there are a large number of of bacteria present due to mishandling of the meat. As long as you shop at a good butcher it's easy to be confident in eating even raw beef, even though there is still some chance of foodborne illness.
@@beanzlord22 48 million people get sick, 128.000 get hospitalized and 3000 people DIE every single year from food poisoning! And that's just the US!!! Don't try to play this down like it's not a problem at all!!!

Most places sell safe raw eggs. The texture is a little bit weird but you get used to it! Goes great when mixed into something!
Hundreds of millions of people eat soft boiled eggs daily. The temperature of the yolk in those eggs is not "safe." Somehow no one gets sick. Most of Europe eat food containing raw eggs and problems are very rare. Most salmonella from eggs come from homemade mayo that has been stored too long.
If you are worried about food safety, bagged salads and sprouts are the NR 1 problem but there is no yuck factor so it gets little attention.
@@hanstun1 I live in Europe and have always been told to not eat raw egg. Everyone can eat what they want, I am just a little careful about eggs and stuff like that because I had salmonella poisoning once and it was awful🥲

In Belgium we call it the filet américain it's almost the same but we add some home made mayonnaise with mustard and a rwa egg joke with pickles non sweet ones, pickled onions, and capers and grounded beef filet mignon . The version you showed is the french version but still one of the best way to eat a filet mignon.
