If I’m using all one color do I need to spike stitch the last row? It doesn’t show up.

It’s completely up to you! It shows up slightly but not as well as if you were using two colors. If you don’t need the extra length to fit around the ornament then you can omit that row. If you need extra length you could do try another round of single crochet
