I just remembered, Canada has the most lakes in the world, meaning it would have the most islands in the world if the water and land inverted...
And some of the priciest real estate in the world for the southern islands.
Earth isn't 70% water, it's surface is covered by 70% water. The planets mass itself only is about 0.0225% water, so on this world we would probably have a very high amount of ground water.

Arachnid it probably wouldn't be water as we know it, but a solid form of it (maybe ice) or a series of condensed (maybe gas) layers of hydrogen and oxygen.....but I don't think that's possible.
Actually, a hidden ocean that might be underground, protected by ringwoodite, implied by mantel minerals could have more water than Earth's upper ocean. Maybe even "alien" life.

One problem with this hypothetical world is that climate would be really f#$%ed up. With the land masses that way the Ocean Conveyor Belt (which helps regulate the temps) wouldn't exist. Areas in mid-pacific and mid-Atlantic are likely too far away from shores to receive any rain. Its been said that on former super-continents like Gondwanda and Pangea had that problem so their inner areas were vast deserts.
If we had the same amount of water on the planet some of the land area on these maps would fill with water. I wonder what it would take to simulate that. Someone could probably figure it out with Google Earth data.

Imagine the river nile or the amazon river. It would be like a land bridge in the middle of a huge ocean.
Not all land would become water, and not all water would become land. Rivers are usually above sea level since they use gravity to flow, so the nile would remain underwater. The opposite goes for the Netherlands. Since a lot of the Netherlands is below sea level, the land would remain as land. Unless you're going by the inverted map, which wouldn't make sense, since the Netherlands would be a sea above sea level and nothing to hold all the water from flowing down into the ocean of Eurasia.
Most of the inland lakes in Canada, including some of the Great Lakes have bottoms that are above sea level, so inverting the land would... leave them under water? Shallow shoals?

However, now I think of it, if the sea level stays the same and depths/heights are mirrored across it, it would be more like the Dutch dug a deep canal at the border of their country gently sloping downwards into the Europe sea. What if you created a computer model to test the geographical inversion?
Software modelling problem, you could use software that was carefully calibrated to give best possible results when simulating meterological effects on normal Earth with no way to calibrate such software to provide accurate answers for this planet. Also without knowing what kind of vegetation exists on the 'land' the model would be incomplete/inaccurate.
And turn it into a game!!!

Assuming we invert around sea level, then Everest would become the lowest point in all the oceans, and the Mariana would become the highest mountain. The new mountains would be very oddly shaped and would probably rapidly erode into more stable forms (this would be very catastrophic). For instance, the new Mariana Range would be very monolithic and probably much too heavy for the crust to handle, meaning it would effectively sink. But let’s ignore the fact that the landforms would be pretty impossible. If the sea level remains the same, then Mauna Kea would be a deep lake, but by no means the deepest, surrounded by a very high plateau. Most of the Earth’s land would be a high plateau like this (whether it would be very cold is up for debate). This plateau would have deep valleys and holes where mid-ocean ridges and sea mounts once were, and would rise quickly from the lowlands (the current continental shelf) that would fringe the water bodies. The continental crust would be thicker in general than on our Earth, much like under Tibet, and it would be interesting to know if this is a plausible scenario. I certainly can’t see a planet forming with this topography naturally. Mauna Kea could only be the deepest water body of you assume the entire depression was full of water. But, as long as sea levels are consistent, Everest would be the deepest part of the Ocean. Chimborazo would be a deep point on the massive trench that was once the mountain chain extending from Alaska to Patagonia. It would be the closest point on the Earth’s surface to the core, but relative to the ocean it would not be as deep as where Aconcagua was or a number of other points. The Himalayas and Tibet, plus the surrounding ranges would constitute the other major deep region of ocean, though generally these small oceans would not be nearly as deep as ours. There would be many shallow seas, such as the one where Australia once was. This Australian sea would feature a flat island where the depression around Lake Eyre is. The deepest lake on Earth would be what is New Guinea, and Puncak Jaya would be the bottom (deeper than Mauna Kea). In this alternate world there would be a lot of extraordinarily deep lakes, especially where there are, on our Earth, volcanic islands. Antarctica would be split into a large, deep sea and several smaller bodies since large parts of it are below sea level on our Earth. It is hard to imagine what it would be like, since these bodies would be surrounded by plateaus. Would ice flow from these plateaus and fill up the depressions, thus locking the Antarctic seas in under a huge layer of ice? Who knows, cool to think about. Weather and climate is pretty tough to imagine. I imagine this Earth would be quite dry and the interior of the mega-continent very cold. I imagine you’d want to live on the the lowlands near the sea (once continental shelves as I said), as the plateaus (or should I say, plateau, singular) that wrap around the world might be quite inhospitable.
What would the Netherlands look like... lower than the sea but then land. Would it be a plateau of water rising from the sea?
I don't think so, cause Nederlanders dry their land (or at least a big part) by themselves. I think it's the only place that would look like it does currently ^^

More likely the innermost land would never be settled as it would be uninhabitable, more closely resembling the African Sahara or the North American Death Valley as next to no moisture would penetrate that far inland.
On the other hand, whatever life did arise on that planet would have followed an evolutionary path vastly different from our own, taking advantage of whatever non-inert gases were most prevalent in the atmosphere as well as not being nearly as reliant on water as our life is. The ecosystem of a 30/70 water to land ratio planet would be completely alien to our sensibilities to the point that we may not even recognize it as life.

I think that life would be possible, however would be much different, needing to be able to function on much less oxygen. Since about 70% of the atmosphere's oxygen comes from marine life, if the planet was 30% water instead of 70%, then there would be much less oxygen in the atmosphere, resulting in different life forms, adapted to the situation.
70% of oxygen comes from marine life because 70% of the earth is covered by water... if 70% was land 70% of the oxygen would be created by plants, since they would have way more space to expand... the only realistic evolutionary difference i can see is organisms able to thrive with less water, or able to store water in their bodies for later use, like camels do, and certain carnivorous animals that get the water they need from the blood of their prey

@Mathieu Levert By our planet's standards of evolution, yes. But our planet developed with the 70/30 water to land ratio and life evolved around it. Life evolving around a 30/70 water to land ratio would, by necessity, follow a much different evolutionary path with less reliance on oxygen and water to survive. Perhaps a stronger emphasis on photosynthesis based on some other combination of elements?

What would cultures be like? War... like, all the time. As the different people groups would all have land access to each other from the start so conflict would be everywhere.
Any islands would become lakes and lakes would become islands. Meaning that any island ocean area would have fresh water because they're lakes and that's a thing most lakes have. And all of the Antarctic should be "The Antarctic sea" and in five million years the Mediterranean will become an island instead of part of the main continent that would probably be named something like "Terra Unitum" (Latin for "United Earth") and in the future the land might get split off by the continental drift. There is also the (Very unlikley but fun to think about) chance that dolphins will take the place of people and hunt shark sabre tooth tigers and take down whale shark mammoths that are still around today unlike our versions lol

We can recreate a planet in computer simulation, it would be sufficient to answer your question about atmosphere, fresh water, deserts and maybe general problems about culture for example where will be best places to sustain cities etc.
We have really accurate models of that already, so it's problem of inserting inverted earth into them.
