You are suppose to season the maker plates prior to using to make non stick better and to make Teflon coating last better. Without putting butter on the outside your sandwich will not brown properly and more likely to scratch machine.
Overall calories consumption more than expenditure makes you fat (storing excess energy as fat). Butter can make you fat as it is high in calories, carbs definitely can make you fat too but it is a overall consumption rather than one or the other.

Yes, I love butter both side but need to watch my weight so not so much butter now a days

VST070 takes longer to heat, because the plates are removable (you heat "a lot of air" underneath the plates)

I think that your toasties aren't browning evenly as you don't appear to have buttered the outside of the bread.
Yes you are right, we don’t butter outside of the bread most of the time. I would love butter 4 sides but I hate the calories
You could try a little fry light on the plates, this will help solve the issue. Good choice of brand though, good demo, Stay Safe.

Don't use a plastic chopping board! Micro pieces of plastic will end up in your food. Always use wooden one
