The reason they don't is simple. They don't actually work in the Pawn Stars shop. They're literally multi millionaires.
They only "work" in the stores when they're recording episodes for a season. And you won't generally get rich dudes buying interesting or expensive stuff.
Again, since they don't actually work there and it's not like the camera and production team is there all day.
I'm assuming they get called beforehand when someone is interested in selling something.
I usually see the same people selling different items, mostly because they're acquainted with Rick and/or are brokers for these items.
I like seeing people buy stuff from the shop!
