    I've been using a category system for a while, and I love it. My categories are:
    Monday -3 roasted veggies
    Tuesday- soup (salad in summer)
    Wednesday - frozen meal
    Thursday - Asian/Mexican
    Friday - American (burgers, grilled cheese, hot dogs, etc.)
    Saturday - meat
    Sunday - pasta
    It allows me to be creative and have variety each week, but also keep the options limited so it's not overwhelming.

    We are a “bowl” family. Taco bowls, Fajita bowl, Greek bowl, salmon bowls, breakfast bowl, etc. If all else fails, I always have something for some kind of bowl.

    The thing I love about a capsule meal plan is once you have your grocery list, you can work towards getting each ingredient at its lowest prices. This saves a lot of money, while simplifying the process. And with all ingredients, available all the time, you have maximum flexibility.

    My favorite cake mix recipe is from the minimal mom. One box of yellow cake mix, one stick of butter, two eggs, and a whole bag of chocolate chips. It's amazing and requested for birthdays.

    This video is perfect timing. I have a super busy day today and you mentioned soup and sandwiches and a bell went off in my head. Tomato soup and grilled cheese for dinner. We are empty nesters and I have no idea why I think I still have to make a full dinner every night. Thank you for the inspiration.

    I tell all of my friends about your channel. I just love the no nonsense straightforward ingredients. There are so many recipes and meal plans i see that require so many ingredients i dont have on hand. I end up spending more money because i have to go buy them. I can always find something new and creative from your videos that i usually have all the ingredients.

    Love all of this!! One thing I do for dessert is keep cookie dough in the freezer ready to slice and bake. My signature cookie is an oatmeal chocolate chip cookie. When I make it I make a double batch bake what I need and freeze the rest in a log shape in some plastic wrap and parchment paper so when I need it I can just slice and bake! I’ve also seen it where you can freeze in a ball on a sheet pan then once frozen place in a baggie.

    I’m a single working mom. I thrive on miracle meals. I don’t have time or energy through the week to slave over a dinner my toddler isn’t going to eat anyway. I do a lot of food prep on weekends when I’m not working and freeze everything. Then I pull all of my prepped ingredients out of the freezer and dinner is on the table in 15 minutes. Buy a small chest freezer if you have the space and money. It was one of the best kitchen investments I’ve ever made.

    My RADA experience. back in the early 1990's, a co-worker's grandmother was selling RADA for her church. I knew I had to order something as it was a small medical office and we all did the "selling thing". Although I had a very expensive set of knives I bought while stationed in Germany - I bought a peeler and 2 small knives. Man I was blown away. So next time someone was selling I bought a few more. Then we started camping on weekends so I needed duplicates. We were active in the American Legion and had a steak night once a month - those peelers came in handy and I carried one in my pocketbook. So now I no longer camp and brought all my RADA's home - my knife magnet only has one of the German knives and the rest are RADA's. I have given them as birthday gifts and even once as a wedding present.

    Thank you for always considering various dietary needs. It helps when I have several to take into consideration in my family!
    One of my easiest and favorite quick have on hand meals for GF and vegetarian is: a packet of RightRice Risotto (I like the creamy Parmesan), a bag of frozen veggies, and either a can of white beans or you could easily throw in a can tuna/chicken. It’s so easy and filling and is one pot. So nice on those busy nights!

    I like the idea of a minimalist meal list. As I watched the video, I realized I would often do this in certain seasons when there were so many activities that my family and I had to attend.     I love the idea of a capsule. You are right about easy recipes. I make a crockpot beef soup that is So easy, beef cubes, one can of diced tomatoes, frozen mixed vegetables, cubed potatoes and a big container of beef broth. Crockpot on low 8 hours. Boom! Easy. Now build a few more.

    This is an awesome video. One of your best! I started a recipe binder for my family years ago. Any time I made a recipe that my family loved, I put it in the binder right away along with any notes as to modifications I made or wanted to make the next time. This has been incredibly helpful. I have a large collection of recipes to choose from that I have since organized into categories. This takes a little bit of work at the outset but the pay-off is huge.

    I had a whole set from Rada but the handles of the knives…. I didn’t like how they felt in my hands. But my whole family loves them! Great knives.

    We needed a meal that was was to throw together and microwave later on Halloween (we werent going to be home)...saw this on tiktok and though another taco soup how good could it be.... right? It was sooooo good😮 Especially the next day too. Im not a ranch person (powder kind) but it gave it a ton of flavor.
    Taco Soup
    (Crockpot)
    *1.5 lb ground turkey (sub'd from beef)
    *can corn
    *can kidney beans beans (sub'd from black beans)
    *can diced tomatoes (we used seasoned kind)
    *can green chilis 4oz
    *1 TBSP minced jar garlic
    *1 packet ranch
    *2-3tsp cumin
    *2tsp chili powder
    *1tsp onion powder (sub'd from.real onion)
    *2 cups beef broth (i bought can)
    3-4 high
    5-6low

    I totally took that Swedish meatball orzo and changed it all around to be a Philly cheesesteak hamburger helper copy and I enjoy having it at least once a month because I don’t like pasta very often but this helps me enjoy it. Yummy ideas! Tacos are my husbands favorite meal.

    My go to dessert is cobbler or really dump cake but I don’t like that term. It’s just yellow cake mix with either peaches or apple pie filling, butter and cinnamon. No need to mix just layer the dry cake mix in between the filling and butter, sprinkle cinnamon as your heart desires and bake until the top is GBD. I haven’t tried strawberry or blueberry filing but I think it would be delicious as well. Don’t forget to top with your favorite ice cream!

    Yes it's soup season. I bought a cabbage from Aldi, know it will keep for a bit, it will be used in a great soup soon! Have the recipe in my head but will still get ideas. I like your recipes but some use too much dairy. It's ok, still watch and I think I'm actually going to try one of the cream soups with broccoli and potatoes.     I've got a lazy slow cooker unstuffed cabbage that is really good but it is a soup. Right now, I have 15 bean soup in the crock. The only thing I did was saute onions in bacon fat. Later I will add some leftover frozen ham.

    Scaled the cake recipe down to an Australian 'home brand' size cake mix (they are 340g instead of the Duncan Hines/Pillsbury 452g box cake mix size). Ends up needing 3 eggs, 170ml oil, 170ml sour cream, 85ml milk, and the packet of pudding. Hope this helps some Aussies that might watch these!

    Love this Mindy. I've got the recipes. I can cook them all. I even have a couple miracle meals we keep stashed for the girls to start when all else...you know. Now I just need to organize them a little and make some capsules with them and rotate things a little differently. Blessings to you for unconfusing my meal planning.     When I'm struggling to come up with a meal plan, I've been trying to think of recipes in categories as well. Chili/soup and tacos are definitely a couple of the ones I use. Stirfry is another one. I'll also think in terms of flavor categories as well, such as TexMex or Asian-inspired. I should probably jot down some actual lists of recipes that fit in these categories to make it a little easier for myself. 😀
    I've been trying to build my slow cooker repertoire, but I'm struggling because I really try to err on the side of more vegetarian/meatless meals than meat-filled meals. And I don't have a good repertoire of meatless slow cooker meals that are also easier to make and don't involve a lot of precooking ingredients.

    My husband and I both work full time at two different restaurants so its hard trying to find easy recipes for us that we both enjoy, so thank you for sharing these awesome ideas! I've been printing off new recipes to try and if we like them, they go in the book! I can't wait to try some of these. ❤
    Side note: do you have any good chicken ala king recipes? I am fan of the stouffers but would love to try a homemade approach or spin. 😊

    Mindy I saw you on Kotv this morning. Which of course sent me to your channel. Just subbed . But, where is the recipes for the meatballs with the jelly and bbq sauce ?
    I looked but I can’t find it. Please help ! Thanks. I am excited about trying your recipes.😊

      Its just a bag of meatballs (home style not Italian), your favorite bbq sauce (the whole bittle) and grape jelly (maybe 1\2 to 1 cup--depending how sweet you want to go). Some people use cranberry sauce instead of the grape jelly, especially at holiday time.

      I use about 1-2 cups BBQ (depends on the size of the bag of meatballs) and about 1/2-1C grape jelly. I heat them up on low or high until the meatballs are heated through. Usually just takes 2-3 hours.
