Expectation management like that is so important and I don't think enough people are practiced in it. I love to see you enjoy what you've already accomplished while looking forward to what's in store with an open mind!
Something you can try to keep them from sinking is to leave them in the oven to cool down with the oven. Just crack the door very slightly so it stays warm inside and slowly comes to room temperature. The temperature shock of taking the tray out can be what causes a very delicate cake to sink. If that doesn't work it's probably just the recipe :)

Just a quick cooking tip!!❤ Baking soda/baking powder creates little bubles in the mixture, that's why it's light and fluffy and rises when you bake it. Because of this, you should be careful with the dough after adding the baking soda, you don't want to burst the bubbles. And they also disapper over time. So don't over-mix and get it in the oven asap!!🤗🍰 ✨ But I do have to say, the cupcakes look really yummy 💜☕ I wish you a lot of fun with baking!!

For gluten free, vegan baking, you typically need a blend of flours for a good rise and texture (and to avoid that sinking when they cool-in your case, I don’t think it had anything to do with the temperature or cooling process). Flours like almond or coconut will not really rise on their own (especially without egg). You need to blend with something like rice flour, sorghum etc for a better crumb and rise. Not sure what is readily available in Japan, but we have a variety of gluten free, all purpose flour here in the US which is already pre-blended so you don’t need to buy a bunch of specialty flours and combine them. Maybe you can find something similar in Japan or order online? The flavor sounds absolutely delicious!
sometimes with vegan baking the tops will look fine but without a binding agent the inside will remain a little undercooked causing them to sink no matter what, but! if you put in like a flax seed “egg” that usually helps
Someone might have already posted this, but: when making whipped cream, you can put plastic wrap over the bowl, then just poke the metal mixing piece through! You have to be careful to not rip giant holes as you whip but it works pretty well to prevent splatters 🥰

the cupcakes probably sunk bc theyre gluten free! gluten free baked goods tend to sink depending on the flour used (if the flour has xanthan gum or not i think) so i wouldnt worry 😅

Almond flour is a heavier denser flour so it's not uncommon for it sink some because it makes denser baked goods. If it taste good I wouldn't. worry about it.

That's why I always check if they're done with a toothpick. If nothing sticks to it, then the cake is done.
