    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on UA-cam.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

    Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

    I never had the balls to make sushi as I didn't think it was possible. Covid forced me into it and Hiro taught me how. It was a lot of work and adjustments along the way but its getting better each time. Thank you so much for sharing your knowledge!

    I visited Japan years ago and we dined at a restaurant by Mt. Fuji. We ordered a sushi boat that had fresh fish, lobster, scallops, shrimp, etc. (can't remember all). I grew up eating raw fish in Hawaii, but never tried raw scallops, lobster, etc. Delicious! Thank you so much for sharing your knowledge and showing us how to prepare and plate the scallops sushi! Beautiful presentation too!

    Hiro, my friend, g11d aftern11n!!! That's what a I call fine sushi dining! I love these recipes very much and I would love to try and taste these dishes!     I finally got a chance to watch this and let me tell you this did not disappoint at all. Charles I feel the same way as you when it comes to scallops, "I could eat them ALL DAY LONG". A scallop and Hamachi roll with avocado & cucumber(inside) with a Blue crab, masago & mayo mix that was torched on top would be insane. My mouth is watering so bad right now.

    I have never seen you guys devour your creation so fast before, must be really good. Seems that these scallops are a better deal than lobster, no waste or cooking. An interesting note, they had Kewpie mayo at my local Walmart yesterday, Fresno, CA.

    So totally love this scallop roll. The addition of garlic butter is an added bonus. Would so love to try it but wouldn’t know where to find it and as well to find scallops I can eat raw

    I've always heard stories of the legendary sharpness of a sushi chef's knife, but watching Chef Hiro's knife glide through those raw scallops like butter boggles my mind. I'd be afraid to even pick up a knife that sharp, much less cut food with my fingers right next to the edge.

    How about doing some good old American fish like Channel cat, trout, bass or bluegill(brim)? Or how about the Asian carp here in the Midwest. If you really want a challenge do gar. A Vietnamese friend of mine said they have a good way of cooking gar and its very good (cook it till the bones turn to mush).

      Yeah and probably fresher, what they meant is in usa you can't use every scallop cause most of them are not good quality, and the fish markets here sell previously frozen stuff, you probably in Mexico at a fish market can get much better quality for cheaper and fresher scallops
