I had an issue with water in the grated spud part, I made it the old way without mashed spuds, im thinking cheese cloth to squeeze out the water, on a time limit as it will turn on me 😅. Others say it comes from the word bacstaí - to bake. Its origin dates back to before the famine times. Boxty is an authentic Irish dish which originated in the 1700s. Yeah I need to do one with just raw spuds too. I was getting a bit of stick over that! 😄
I usually fry some onion (chopped small) and add to the mix. Adds a bit of flavor.
