- I remember the first time I tried salmon soup as if it was yeasterday. I am always down for seafood, but the Finnish salmon soup was nothing like any seafood I had ever seen. A simple dish, staple of Finnish food, full of flavor and tradition which I truly believe could described as Finnish summer in a plate. If you have never tried it, you are definitely missing out!

Good. One of the few recipes where it's actually made as it's supposed to :D I skip the broth making part. I just fry the leeks, carrots and potatoes in butter and the add water and the stock cubes. Less dishes :D

Soup looked very authentic. One note though: you forgot butter! It is a vital ingredient in this dish. You can't add too much of it... :) Sometimes I also add cream cheese, Koskenlaskija or something similar to the soup. It thickens the soup nicely.
Oh I just added a bit to fry the leek, but I have indeed noticed I have ordered soups that are a bit greasier, maybe it needed a bit more. I definitely have to try adding koskenlaskija, anything is better with it!

You can basicly use any fresh water fish in that soup. Now that the summer is near. Next dish you should make fried muikku and new summer potatoes. Just remember to use the smallest potatoes. They are so good and sweet. I eat them with bit of butter and salt.
I was recently talking about Finland with a friend of mine in a podcast and while he is a very picky eater we both agreed about how good new potatoes are and went on about it for a bit too long 😂. Should definitely try, love muikkus as well.
My family recipe calls for generous amount of butter when cooking the carrots and onion/leak, also personally I like to use half and half of fish and vegetable stock. The vegetable stock rounds out the flavor profile nicely. Totally gets my authentic seal of approval if that's what you meant if you would do something differently.

Looks really good. I will try to probably make it for myself only because my family doesn't like salmon. They think it has a very strong flavor. Or maybe like you said, I'll try half salmon and half white fish (maybe cod).
I have to say, Im not a huge salmon fan but flavor here is not that strong so they might like it, but if you go with half and half its of course even milder
Traditionally ... or as much as I know about Finnish traditions, Im an Estonian and fish soup is a classic - traditionally onion and carrot are not cooked before because they go into the stock - the part that you completely skipped! The best fish soup comes when you actually put in the effort and cook a broth with fish heads and spines and use the meat from the said heads. Next level flavour profile. Try it. We both know fish stock cubes dont compare ;)
But, I think youre right in a way - if I make the stock and dont use the onion and carrot from the stock, but make a separate butter fried carrot/onion mix, I think this will add even more depth to the flavour.
Now lets see if youre going to use white wine or lemon. And the eggs and sourcream. Or perhaps, vodka?
Oh, you know about the broth. GO check out fishermen and open markets in your area, not supermarkets, the actual fishermen know and value a customer who knows what are the best bits of the fish.
Also, you totally ignored the existence of bay leaf.
Yeah, thought about it, probably some local fisherman sells that, will definitely go looking for that with more time. In Mexico our usual fish soups are tomato based, but we do the broth from scratch as you said, its of course a complete different level. Carrots and potato are used too and some chili. Its something you often have when hungover.
I wasnt sure about the bayleaf, I use it often but the traditional recipes I found didnt call for it, might try it next time
Salmon soup? 😬 not so sure about that one ruining my salmon steaks. But I still enjoy your channel recipes.
Definitely worth it! But understandable, some other fish works nicely too.
