Epic Homestead Kitchen, and have it be the repository where all your cooking recipes, dehydrating/rehydrating recipes and tips, canning recipes and tips, etc... can go. You could take the camera along as you harvest what you'll need for the episode, showing folks how to properly "cut-and-come-again" on some plants and otherwise demonstrate how to harvest from plants correctly in order to prolong harvests, etc... and then use what you harvest to make something.
If you decide to put drywall in the garage, I recommend you put insulation in the walls and ceiling first - it makes a dramatic impact on temperature in the garage. (Fellow San Diegan). Also, consider getting two fans: one to vent hot air from your attic in the house, and one to vent hot air from your garage.
One of the other channels that I watch is doing a above ground root celler and they're going to have to do temperature control. No idea how that works cuz they're still working on it lol.
I agree with Britte Sanchez. Line the garage with pegboard. If you don't like the look of the seams trim it out with stained or painted slat. Peg board holds up pretty well and gives you the ability to quickly reorganize without having to punch holes in your sheetrock.
You can bury watering troughs, build plexiglass covers & fill with sand or ?? for root cellars. You can even cover with small succulents in trays to disguise them.

Instead of drywall, you can put in those pegboards right against the studs. It'll allow you to hang tools much easier, directly against the wall in any type of tetris way you'd like.

I'm in coastal Oregon. It was bad here from Labor Day evening on until about a week ago. We finally got the first gasp of onshore winds last Friday and things greatly improved over the weekend. We only had ash a few times. The Willamette Valley had straight up hazardous air quality until it FINALLY RAINED last night. Not all of the valley got the rain, but air quality improved dramatically. I'm looking forward to getting my own home garden going hopefully next year!
I'm watching through all of these for the first time. We moved to a 2 acre property 3 months ago, and I feel the "there is so much to do" soooooooo much. We came from a situation where our house burned down, and I have been working to save so many of my plants that we pulled out of there before the dry season sets in. Plus putting in garden beds, the water situation is a mess, but the outside is keeping me sane in a way nothing else is. Also have a weed situation with himalayan blackberry which will need to be managed before more garden beds can be put in. That stuff is like spiky kudzu...
I like the water root method for pothos, but the reason why is because I actually put it in my fish and shrimp tanks. It helps balance the nutrients in the tank and I don't need extra water. So it works for my system... even if I do have to clean the plants a little.

Could talk about so much of this for a while with you!! I'm in my first house that I can actually totally make my own, so I know how you feel about making it your own with massive but slow renovations. Played around with ebb and flow hydroponics a bunch of years back (built with 2 liter soda bottles and a storage bin) and was able to grow massive tomato and basil plants. Looking to do that again at some point. Rebuilding my pantry/laundry area and that will be a large space. Saw someone mention a root cellar and have a space in the garage I could re-purpose for that but not sure where to start. It's like we are doing so many of the same things! Going to build a seed starting station in an extra bedroom (my sons old room... don't tell him!) in the closet... So many plans!
Love your channel. I'm in Orlando area, so we can grown similar things. But point is that I've recently moved into a new property and have started re-building my own grow space. Thanks for sharing.
I've been watching the homestead videos thinking this place has epic possibilities. I was also thinking about that clay soil. I see lots of really bad advice online, such as tilling. (Can make it worse...) It'd be a great time this winter, just before the rains come, to get a head start on mass soil improvement fairly cheaply. You may already have plans for this, but I'd suggest sowing winter-suitable cover crops in areas that need it in future, such as the orchard area. Not just legumes, although they will help, but deep soil-busting types such as daikon radish, for instance, can really help. I still use a heavy 4-time spading fork to open up damp clay (in the same way other folks use the sod-buster types of broadforks) without turning it over, before I dump soil amendments on top of it. (You could do that before planting the cover crops or after cutting them down, or both.) I grew nectarines in clay up in the Mira Mesa area (many many years ago, before raised bed gardens were a thing) and even on a slope with drainage, it was difficult (I lost trees like citrus) until I could get some serious soil improvement going. I was going out to the beach and dragging home trashbags full of seaweed and horse manure from stables because I couldn't afford to buy anything like mulch or compost or soil mix.
I grew up in a house that was in a quarrying town and we'd have frequent man-made earthquakes. We kinda got used to the idea ya couldn't put things on shelves etc. Didn't know earthquake guards were a thing, would have been really helpful.
Looks fantastic already. Thank you for all the gardening info. You've made gardening much more accessible to me when I didn't think I had a "green thumb." Since the beginning of April, I have fed myself the 7-10 cups of vegetables per day that I eat and it all came from my container and one raised bed garden. Still growing and harvesting and hope to get through October without needing to go back to relying on store bought. This winter I want to set up my seed starting in the garage. So far I have only used starts from the store. I am also working on setting up my worm compost farm. My tumbler compost system is working, I hope - not much heat produced so maybe I need more greens?
Your work is looking great! I got a bit of a building and remodeling bug myself, and it's fun for me seeing what other gardeners are doing on various scales. I've recently received your book and am hooked!! Even taking it with me to the garden for reference, extremely helpful and insightful and feel very lucky to have received it so soon due to the devastating fires plaguing California. Have you thought about making an outdoor cooking area? A place you can cook, can/jar and prep food that you may not want to do indoors especially for those hot summer days.
for cooling your home....i recommend getting a portable or window air conditioner if you aren’t getting central air. also a whole house fan is wonderful to use at night when outside air is cooler than inside air
I thought you lived in an apartment, congrats on the new larger place. The garage floor is cool, it's too bad it's not a 2 car garage ,you would have more room to work on or build things. I hope you enjoy your new place for as long as you want or need to be there.

I love your gardening tips and advice. Your style is really down to earth and there is little to no BS or waffling on. I am gardening in the sub-tropics in Brisbane, Australia so much of your advice is relevant to me here. I can grow most things all year round with the exception of the brassicas for which I only have a small window in late autumn and winter. It is now spring here and I just harvested the last of my winter tomatoes and peppers and will now replant for my second crop. the peppers are perennials here so I just prune them and they will come back. My broccoli, cauliflowers and brussels sprouts are ready to harvest as are my sugar snap peas. Beans, beets and chard will follow them. Good luck with setting up the homestead!!! I am soooo jealous.

Like the idea of a root cellar.The house I am renting north of you in Hemet Ca, has one that we use for storing our holiday decorations in and we keep open durring the day to give our two dogs a cool safe place to go when it is hot ouside. It stays cooler down there than the house does in the middle of the day.

for cooling your home....i recommend getting a portable or window air conditioner if you aren’t getting central air. also a whole house fan is wonderful to use at night when outside air is cooler than inside air
I thought you lived in an apartment, congrats on the new larger place. The garage floor is cool, it's too bad it's not a 2 car garage ,you would have more room to work on or build things. I hope you enjoy your new place for as long as you want or need to be there.

I like Epic Kitchen! I got your book yesterday! Fantastic to learn about soil and the light spectrum! I just set up one of my grow lights to work on cuttings with blue light in my office. Testing it out to see how it goes. Your place is coming along! Hang in there it will get more Epic when you get closer to where you want it. Hope you are sleeping well at night depite the crazy heat you are having. It's so sad and scary about the fires. I pray the weather will change so the fires end. Make the best of 2020. I love your gardening tips and advice. Your style is really down to earth and there is little to no BS or waffling on. I am gardening in the sub-tropics in Brisbane, Australia so much of your advice is relevant to me here. I can grow most things all year round with the exception of the brassicas for which I only have a small window in late autumn and winter. It is now spring here and I just harvested the last of my winter tomatoes and peppers and will now replant for my second crop. the peppers are perennials here so I just prune them and they will come back. My broccoli, cauliflowers and brussels sprouts are ready to harvest as are my sugar snap peas. Beans, beets and chard will follow them. Good luck with setting up the homestead!!! I am soooo jealous.

I love your lights, I now want a set of outdoor string lights like that! My gf started a dragon fruit in a pot in Feb, it's just reached the top of the column and is tipping over now.

Wow. Watching this and remembering the fires of Sept 2020. (I was much closer to Bobcat Fire in the San Gabriel Mountains above the foothill cities. That coppery sunlight is too vivid a memory.)
Like the idea of a root cellar.The house I am renting north of you in Hemet Ca, has one that we use for storing our holiday decorations in and we keep open durring the day to give our two dogs a cool safe place to go when it is hot ouside. It stays cooler down there than the house does in the middle of the day.
