  • Easy and perfect meringues. Bezele :)
    So easy to make!
    RECIPE
    2 EGG WHITES 66 gr.
SUGAR: DOUBLE THE WEIGHT OF EGG WHITE
    extras:
    1/2 tsp VINEGAR
    1/2 tsp CREAM OF TARTAR
    Pinch of salt.
AROMAS: A few drops of VANILLA, or a tsp of LEMON JUICE. ( I prefer Lemon Juice)
    DIRECTIONS:
    - Clean all your disks and dishes with a little vinegar and water.
    - Separate the eggs. Absolutely no egg-yolks allowed in!
    - Mix EGG WHITES, VINEGAR, CREAM OF TARTAR & SALT until FROTHY: 4-5 MIN
    - ADD SUGAR - Verryslowly. 2 egg whites usually need around 140 gr. and will take about 3 minutes to pour.
    - Continue mixing on high for 10- 14 minutes.
After 10 min, check every 1-2 min. to see if it's glossy and very stiff. It should cling very strongly to the whisk.
    - Add aromas and 1/2 tsp CORN STARCH.
If you add a color, do it now, but not a liquid type.
    - Mix 1 more minute.
    - BAKE @ 210 F for 1 hour. (max 215 F) if you want them to stay white!
After 1 hour at 210-215F they should be dry at touch, but do not remove them yet from the oven!
TURN THE OVEN OFF, AND LEAVE THE MERINGUES TO DRY FOR ANOTHER HOUR.
    THAT'S IT :)
    p.s. They hate HUMIDITY!!!!!!
So put them immediately in an airtight box, tin, or jar till ready to serve.
    BON APPETITE

Meringue is so delicate! Whenever I try to make meringue cookies, I always end up with soft meringue! Thanks for the details instructions - will have to try again!

Make sure there is NO HUMIDITY in the room. I suspect that to be the cause in your case. Also, you may have taken them out of the oven too soon? (Leave them to dry in the oven overnight)
Or you did not put enough sugar in them?
Bake them at low temperature from beginning, but longer time.
Make sure you beat them for around 15 min so they are so hard you can turn the bowl upside down 😀
Fat and humidity are their enemies: wash well everything with vinegar before starting, and turn on the AC if you have one.
Try it again! Once you get the hang of it, you will realize how simple and easy they are, actually. Good luck! 😀

      @anseatery of course :)
p.s. Don't be descouraged, I had issues with them in the past, but now it's really a breeze. Good luck! :)

@@anseatery You are welcome! Follow the steps exactly and they will come out just like in the video: wash well the utensils and bowl with vinegar, follow the oven temp instructions...after baking them, keep them in the oven to dry some more ...and keep them away from humidity! (turn the AC on if you have one ;))

I just want to ask what should I do in the oven. Should I on the up down hit or only the down hit. Please can anyone tell me 😕😕😕

Ok, so: Preheat the oven and BAKE @ 210- or 215 F for 1 hour.
AFTER an hour they should be dry to the touch, but they still need to "deep" dry inside. So,
TURN THE OVEN OFF, BUT leave the tray inside of the oven for ANOTHER hour, or two (with oven off and door closed)...or even overnight.
IMPORTANT: once out, put them immediately away in a closed box, bc humidity is their enemy!
The longer you keep them in the box, the dryer they will be.
p.s. Make sure ALL your utensils are well washed and dry, bc grease is also their enemy ;).
      Good luck!
