    Eating a salad while watching this. Red tip romaine, red onion, red (😂) strawberries, and almonds/walnuts. Topped w/ WYW Balsamic Vinaigrette.

    Kale tip - If you don't want to steam it (eg want it now but not hot), you can soften it up by messaging it for about 5 minutes. It sounds like a lot of work, but I just turn on a timer and an audio book; it's actually a bit of therapeutic down time for me.

    Kale, chickpeas, and sweet potato is good. I also love to do kale, with roasted chickpeas, and roasted butternut squash. Yum!

    I just made your potato corn chowder tonight for dinner and I loved it! I know this is a random comment because you didn't talk about that in this video but I'm really looking forward to trying those salads they all were mouth-watering in appearance and I can't wait to taste them.

    I want to take a minute to thank you, personally. I stumbled upon your videos and I admit I did stop first cause I thought you were good looking. ( but that's beside the point) And then, I listened to you, what you were saying, and your non-rigid approach, and I felt like a mix of tears and laughter blending inside. I am following a vegan wfpb diet( 6 years), but, that would not be enough for me in the past( past being 5 minutes ago) . No. I wanted to be a perfect one, and I would have phases where I'd listen to one doctor religiously, and then another. Moving on like this from a set of rules to another. It's hard for me, I have a very obsessive personality ( diagnosed as a disorder) and having flexibility is something I do, only on a yoga mat. One day I listened to one talk from a doctor I won't name, and here I was, throwing away a bunch of walnuts, avocados etc, promising myself never to touch it again. Oh yes, I felt so proud of that, I felt righteous, a perfect vegan. And then, not so good in the coming months. So I would get that food back in my pantry, and find another set of rules. Measuring, counting, and everything felt like an equation. Now, I come off an eating disorder that lasted many years, I'm 50 now, and I'd like to be free from all that rigidity, without falling into the opposite direction ( nothing matters, I'll eat whatever) I need BALANCE. The other day, another Dr was suggesting to ditch soy because of the fat content: Soy has made wonders for me, eased my menopausal symptoms big time. But here I was, considering it. Why do I give so much credit to them? I know what I like, I never overdo anything...I never have oil cause that's common sense to me, or processed food ( except ketchup and mustard sometimes, and....peanut butter occasionally) So I'm already eating right. I've still got my 30's weight, it's not like I've got to worry about that, right? Anyway, sorry for the long comment but, I rarely do comment. It's just that you made me click about something, you made me laugh about stuff I used to think regarding food ( bio availability, etc) real hard. If I was not a very low income person, I'd purchase your food items, but I also cannot eat any spices or onions due to oesophagus chronic issues. But if I could, I would. My challenges about food are enough as it is, so you made me see that I don't need more rules, and I need the joy back into my life regarding it, not to create a perfect equation. Thank you very very much for that. From Quebec, Canada.

    Wait, I wanna learn more about why it doesn't matter why it's healthy and why that's not how food works!!! I'm super curious. I always thought it was good to know what vitamins and nutrients you get from foods.

    Tbh I don't think I would be mind blown, I like salads like pasta salad and sweet potato salads with lots of avocado and/or nuts and no (non starchy) vegetables.

    Oohh no. I do not like my salads sweet.
    No raisins, grapes or mango or sweet potato.
    I like my salads Bitter and twisted!
    Lemon juice juice and a twist of pepper.
