On this episode: you MUST try Tom Kha Gai, a this delicious soup from Thailand!
Ingredients:
- 2 lbs. of chicken
- 3 red chili peppers
- 1 purple onion (or shallots)
- 3 stalks of lemon grass
- 1 tomato (de-seeded)
- 5 lime leaves
- 8 chunks of galangal root
- 500 ml. of chicken stock
- 400 ml. of coconut milk
- 400 ml. of water (rinse the can of the coconut milk with this water)
- 125 ml of fish sauce
- 1 tbs. of brown sugar
- 250 grams of chestnut mushrooms
- 250 grams of oyster mushrooms
- a squeeze of lime juice (to your liking or taste)
- fresh coriander (traditional, but personally I use basil)

Hey Amaru!!! Now that looks delish!!! I been wanting to cook the Okra soup on page 024 in your cook book but the only problem is trying to find the African eggplant. I might have to take a drive way up north to find an African grocery store because there aren’t any stores that sell it in my area🙏🏽🥰
Hola sweets, well, the African eggplant is totally optional. That's traditionally how we make it in my country, but adding the African eggplant to this soup is also an acquired taste. While it is among the top 3 of my favorite vegetables, I must say when I make my okra soup, I never add it to mine, unless my mother comes over for dinner. She loves it like this, so... But if you can't find it, don't sweat it ;) Let me know how it was!

If we can't find galangal root is ginger an acceptable substitute? Perhaps using a little less of it to reduce the bite. I defiantly like to toast the herbs over blanching for this type of recipe! That looks so good.
Well, the honest answer is "NO"... It is the taste of the galangal root that adds to the flavor of this soup. Ginger is way too hot and the after taste of ginger will absolutely ruin the taste for you. It would be a waste of your ingredients, please don't use ginger.
