I read a random article about using fig leaves for cooking and so I then wondered if they would make a great ice cream flavor. Upon searching, I found a recipe by David Leibovitz and remembered using his ice cream book that he published back when I first started learning to make ice cream! And so, I had to make this ice cream flavor now. Luckily, my uncle has a fig tree! Fig leaves have a coconut/caramel flavor but more on the floral side. They’re great to use and I’m so happy to discover an ingredient I have never known of before! :D
I used NYT cooking ice cream recipe as a base:
cooking.nytimes.com/recipes/1...
And I also used David Lebovitz’s recipe as inspiration:

Ingredients:
6 fig leaves
1 cup milk
2 cups heavy cream
1/3 cup (67 grams) sugar
6 large egg yolks
Pinch of salt
3 tablespoons honey
I would appreciate a like and subscribe if you haven't already :)

Fig trees sap can be used to coagulate cheeses. It is a vegetarian way to make cheese without rennet. Used in the Mediterranean for hundreds, thousands of years.
Woah. Love tidbits of info like this! Thank you :D
Simply amazing. Here on Hatteras Island we grow lots of fig trees & make preserves out of their fruit. Which of course often end up in fig cakes. Definitely want to try your fabulous recipe. Have subscribed to your page. Awesome!!!
the stickers are amazing! and so is this recipe :) keep it up!
Thank you! :D
Have the fig tree, but the only ice cream machine is an old hand crank you make with salt and ice, not using it!! I read the article on the fig leaf ice cream looked interesting, glad it tasted good.
I wasn't aware that was something you can eat, does sound intriguing tho! Also I tend to make financiers with leftover eggwhites, they're so good~
Love your financiers recommendation! Will definitively give it a try next time I have leftover egg whites. Thanks :)
Love finding out about new ingredients like this! I had no idea...my tiny mind is blown!

I've never heard of using fig leaves in cooking before. I bet you could use them in a few other pastries too (before they fall off for the winter!) :)
Yeah! I was so curious and excited to try out fig leaves when I heard they can be used for cooking!!
You can do this same process with lemon leaves. The result is tasty.
Woahhh. I have a lemon tree so I might try it out! Haha
That sounds delicious! I live in Northern Europe so have no idea where I would get fig leaves though 😅
Haha yes the search for fig leaves limits this recipe much! Thank you :)
I want to be your friend so I can try all your wonderful cooking!
Haha thank you!
Idky but I could see it served with some fruit cake (not the Christmas one) with tons of fresh fruit and whipped cream served with it 😊
That sounds like a great combo! I wanted to eat it with some actual figs but couldnt find any at the store haha
what an odd flavour ??? im intrigued though! (i sometimes use leftover egg whites to make coconut macaroons :) try em out!)
Right? I saw it online and was so intrigued that I made it haha.
