Hahaha your bay leaf comment reminds me of the time my boyfriend made us a soup.,. And put like 10 bay leaves in it, called it bay leaf soup because it’s like all you could taste 😂😂 so use one or two more bay leaves than you would usual and you’ll definitely be able to taste the bay aspects more! :)
A scraps broth episode is here!! Thank you for making it. I feel like it was relevant to the spinach blanching water i had earlier lmao. Im low key worried about the dirt that gets stuck on the roots ends of green onions. But ill just have to clean well. Not that i tried it before, but i imagine that we could freeze our scraps until we gather enough to make this.
I also get concerned about the dirt so I make sure to wash and soak thoroughly! And yes, freezing your scraps is a great way to store them and build them up over time to prepare a stock :D
I’m helping a neighbour who had surgery. I asked her if there was anything I could cook for her. she asked for chicken broth. I imagined making something delicious like this, full of nutrients from the vegetables. Before I left she said she just wanted plain chicken broth with chicken, water and a bit of salt. Blech!
You probably don't taste much of the bay leaf because store-bought tend to be pretty old. We have a few bay trees in our farmstead and we pick the leaves fresh, the taste can be so strong we use about half as much as recipes say to not overpower the dish. If you can find fresh bay leaves and use these, you'll def taste the difference! My entire family are farmers and we live on our own farm so all of our food is fresh and it's made me into a food snob I swear. But seriously, as much as you can, try foraging for stuff if you have access to nature!

what’s a great way to store all the scraps until you’re ready to make the stock? that’s where i find the most problems…
If youre planning on using them soon, just in the fridge. But besides that, you can freeze your scraps in the freezer.
