My son and I usually go through 3 deer a year and this past fall was our worst season ever. Got skunked for the first time in my 44 years of hunting. I take some of the cheapest cuts as roasts and slow cook them taters, carrots, celery and asst spices. They come out tasting so good and fork tender. I also have friends save me the front lower legs of deer(shank) and I do the same thing. When I serve them to my friends I wont tell them what I did so they will keep giving them to me. Many times I'll cook/braise that shank meat with adobada for the best tacos you ever had. I always brown in pan fist. There is nothing as good as wild game, upland game birds being one of my favorites. I try to stock up on beef when there is a really good sale. I bought around $450 worth of prime rib(well not prime) right before Christmas as it was on sale and I had an additional discount so I got it at $4.25 per lb.. It usually sells for $12.99 to $18 per lb. Some of them I had to pay $5.75 per/lb but that is still a super price. I'm also real picky when selecting my meat and I got some really good ones, usually grab 2 or 3 rib/bone roasts as 2 ribs is more than we need for dinner. That leaves left overs for a few days. I had to also be crafty as there was a limit on how much you could get so I used every coupon I could get my hands on, thank you friends, relatives and customers of mine. They should last me into summer

Have you tried rolling your moose meat in flour? It'll help keep it from drying out. I use it on venison, and it makes a world of difference. Your grease has to be hot when you put it in the pan. Try it once if you haven't.

It's awesome. No gamey taste (assuming it has been processed and aged correctly), in my opinion. If you like venison (or beef), you'll love moose meat! I'm always up for a second or third helping, especially if is a moose roast!!
Good Lord ya'all are so fortunate to be able to kill and eat Moose on a regular basis yer whole life! I live in Michigan and have only eaten Canadian Moose once and Yukon Moose once and it was the best Venison I've ever had!!
