  • Quick and tasty Palya made from Sweet Potato or Genasu. This palya or fry goes well with Chapati as well as plain rice.
    Ingredients:
    Sweet Potatoes - 3 medium-sized
    Oil - 3 Tbsp
    Mustard Seeds- 1 & 1/2 tsp
    Cumin Seeds - 1 & 1/4 tsp
    Hing/Asafoetida - 4-5 pinches
    Curry Leaves - 8-10
    Turmeric Powder - 1/2 tsp
    Salt - 1 & 1/2 tsp
    Red Chilli Powder - 1 & 1/4 tsp
    Coriander Powder - 1/2 Tbsp
    Coriander Leaves - 1-2 Tbsp
    Method:
    1. Rinse the 3 medium-sized Sweet Potatoes 3-4 times before soaking and start peeling them. Peel off the outer skin of the Sweet Potato. Sweet Potatoes are quite hard. Cut the Sweet Potatoes lengthwise and chop them into small pieces. Place the chopped Sweet Potatoes in water to prevent them from turning black.
    2. Pour 3 Tbsp of Oil into a pan. When the Oil is hot, add 1 & 1/2 tsp of Mustard Seeds and stir. Add 1 & 1/4 tsp of Cumin Seeds, 4-5 pinches of Hing/Asafoetida, 8-10 Curry Leaves and stir once. Drain Water and add the chopped Sweet Potato to the seasoning. Combine the Sweet Potatoes with the seasoning.
    3. Stir in 1/2 tsp of Turmeric Powder thoroughly. Cover and cook on medium heat. Periodically open the lid, stir, then cover again and continue cooking. Cook the Sweet Potatoes in the Oil without adding water. It might take a bit longer to cook. Expect about 10-12 minutes for them to cook.
    4. Stir well, cover, and let it cook. Covering helps the Sweet Potato cook thoroughly and become soft. Avoid cooking it too hard or too soft and mushy. Overly soft Sweet Potato will make the Sabji/Palya mushy and less tasty.
    5. Add 1 & 1/2 tsp of Salt, 1 & 1/4 tsp of Red Chilli Powder, Add 1/2 Tbsp of Coriander Powder and mix thoroughly.
    6. Cover and let it sit for a minute. This helps the Sweet Potato absorb the salt and spices. Finally, add 1-2 Tbsp of Coriander Leaves, mix well, and turn off the heat.
