I still have a jar from that batch. I had mine put in a tightly sealed jar and stored in the fridge. I tasted it and it's still good, not soggy nor spoiled. The sugar act as preservatives and helps the fruit hold its texture. Same way they do when canning fruits. To be honest, I prefer not to store it for too long. I do a batch if know I will be using it in the next 2 weeks.
Stone fruit usually retain their firmness if soaked in lime (calcium hydroxide) for a couple of days before cooking, something about calcium ions stabilizing pectin, it's usually done with plums to prevent them from being mushy but it'll also work with cherries and such
@lh quenched lime isn't that caustic, you can safely handle it for a short while, at worst it'll make your skin red, just wash thoroughly and you'll be fine

I made these with the pits still on, uncut, when the it's the next day with the water-salt mixture, they just look the same, is there a reason?

Mine were nasty, I just didn't like the taste or texture. It might have been my bias because I was expecting it to taste like the store bought ones.
