Apple Butter
Ingredients:
* 2.3 kg (approximately 12-15) apples (a mix of sweet and tart varieties)
* 2 cups granulated sugar
* 4 tablespoons ground cinnamon (adjust to taste)
* 1/2 teaspoon salt
* 1 teaspoon vanilla extract (optional, to be added after cooking)
* 1 stick of butter (i doubled the recipe so i used 2)
Instructions:
* Wash, peel, core, and roughly chop the apples.
* Melt the butter
* Place the chopped apples in a slow cooker or a large, heavy-bottomed pot.
* Add granulated sugar, ground cinnamon, and salt to the apples.
* Stir well to ensure the apples are coated evenly with the sugar and cinnamon.
* Cover and cook on low for 10 hours, allowing the mixture to break down and caramelize.
* After cooking, blend the mixture until smooth. If desired, add vanilla extract for an extra layer of flavor.
* Store in sterilized jars, refrigerate, and savor the taste of autumn!
Homemade Pop Tarts
Ingredients:
* Prepared apple butter
* Kolacek dough
* 1 egg (for egg wash)
* Sugar (for egg wash)
Instructions:
* Preheat the oven to 200°C (392°F).
* Roll out the kolacek dough and cut it into the desired shapes for your pop tarts.
* Place a dollop of apple butter filling in the center of half of the cut-out pieces.
* Place the remaining cut-out pieces on top, creating a sandwich.
* Use a fork to gently crimp the edges, sealing the pop tart.
* In a small bowl, whisk the egg and a bit of sugar. Brush this mixture over the tops of the pop tarts for a golden finish.
* Place the pop tarts on a baking sheet lined with parchment paper.
* Bake in the preheated oven for approximately 15 minutes, or until they turn a beautiful golden brown.
* Allow them to cool slightly before enjoying these delectable, homemade treats.
Apple Pie Filling for Canning
Ingredients:
* 2.3 kg (about 12-15) apples (a mix of sweet and tart varieties)
* 1/2 cup lemon juice
* 2 cups granulated sugar
* 1/2 cup brown sugar
* 1/2 cup all-purpose flour
* 1 tablespoon ground cinnamon
* 1/2 teaspoon salt
* 1 pack of gel fix (follow the instructions on the pack)
* 1 teaspoon vanilla extract
Instructions:
* Wash, peel, core, and slice the apples. Place them in a large bowl and toss with lemon juice to prevent browning.
* In a separate bowl, combine granulated sugar, brown sugar, flour, cinnamon, and salt. Mix well.
* Add the dry mixture to the sliced apples and toss until the apples are evenly coated.
* Transfer the coated apples to a large pot. Cook over medium heat, stirring constantly, until the mixture begins to bubble and thicken (about 5-7 minutes).
* Follow the instructions on the pack of gel fix to incorporate it into the mixture effectively.
* Remove the pot from heat and stir in the vanilla extract.
* Allow the apple pie filling to cool completely before using it for canning.
Canning Process
Materials Needed:
- Prepared and disinfected canning jars (Microwave them with 2 fingers of water and water on the lids too for 3 minutes or until the water inside the jars boil)
- Large stockpot
- Clean cloth or paper towels
Instructions:
1. *Prepare the Filling:* Follow the recipe provided to make your apple pie filling. Ensure it's hot and ready to be packed into the jars.
2. *Fill Jars:* Using a clean funnel, carefully fill each prepared jar with the hot apple pie filling, leaving about 1 inch of headspace at the top. This allows room for expansion during processing.
3. *Remove Air Bubbles:* Gently tap the jars on a towel-covered countertop to remove any air bubbles. You can also use a non-metallic utensil to release trapped air.
4. *Wipe Jar Rims:* Using a clean cloth or paper towel, dampened with hot water, wipe the rims of the jars to remove any residue or stickiness. This ensures a clean seal.
5. *Apply Lids and Rings:* Screw the ring on until it's just fingertip tight. Do not overtighten.
6. *Prepare the Canning Pot:* Fill a large stockpot or canner with enough water to cover the jars by at least 1-2 inches. Place a canning rack or an elevated surface at the bottom of the pot to prevent direct contact with the heat source.
7. *Bring to a Boil:* Bring the water to a rolling boil. Once boiling, start the timer.for about 10 minutes boiled the jars
8. *Label and Store:* Label the sealed jars with the date and contents. Store them in a cool, dark place for up to a year.
